If you know me, you know I LOVE to bake. Baking for the holidays and family gatherings is especially my favorite. Mainly because it’s a way for me to feel connected to my Grandma, who cancer took when I was 12. I still use her brown Tupperware sugar and flour containers! This year, holiday baking has been especially emotional with the news of my Gramps being diagnosed with stage 3 Melanoma. Tomorrow is my extended family’s Christmas reunion and I try to always bake my Gramps’ favorite pie for it - coconut meringue. I know he’ll enjoy teasing his nephews about getting the first slice 🤣.

I made sourdough discard crackers. My husband likes them. My scale wasn’t picking up on how many grams of pepper I was adding and they have too much pepper for me. We’re trying discard pizza dough tonight. Hopefully the pizza crust will turn out better!

Haven’t posted in a while…My husband and I got a puppy in late February! Her name is Millie and we love her so much! So with our new puppy and then the hot weather I haven’t had time, or the mood, for baking. (We have an AC window unit on the opposite end of our house from where the kitchen is). Tomorrow we’re getting together with family in Council Grove and I always take dessert. I decided to make some no bake cookies today.

Grandma’s No Bakes - no peanut butter here! These are made with coconut 😋. My grandma taught me how to bake and making these always makes me think of her! I miss you lots, grandma!

Kisses Coconut Blossoms - almonds, coconut, honey, marshmallows, and coconut oil mixed in a food processor then rolled in coconut and topped with a kiss! 🤤

Did I mention my family LOVES coconut? 😂
