Fun name for a classic carrot cake flavor cookie!

These Carrot Cake Cookies encapsulate everything you love about Carrot Cake. We start with a spiced cookie base adding the aromatic spices of Ginger, Allspice, Cinnamon and Nutmeg. We then add in lots grated carrots and pecan for some tasty texture… and of course Carrot Cake wouldn’t be Carrot Cake without tangy and rich addition of cream cheese filling. No fork needed!

Nothing says “eat me” like a brownie 🤤

The walnut brownie cookie is the most slept on cookie. Like is really not a cookie trying to be a brownie. It’s a round brownie. 😂 And yes the toasted walnuts are a must… a they add just enough salt and crunch to keep things interesting. Do yourself a solid and get you some. 😀

I’d tweaked our chocolate chip cookie several times before I settled on on current recipe. The version before this one tasted great but was a bit too crunchy.

Funny story: I gave that “crunchy cookie” to a repair man who had come to fix our A/C one summer and this man took the cookie from me and proceeded to knock it on my counter before he ate it! (we were in a full conversation as he was doing this and on the inside I was so irritated 😤) I can take criticism but I was like oh you are disrespectful 😂. Two things stood out to me in that moment…

1. The recipe needed a rework
2. He ate the whole damn cookie (so the flavor profile was spot on 🎯 )

After I got out of my feelings about the was the information was delivered. I learned and grew from interaction. The opportunity for knowledge for are all around us but you don’t let your feelings rob you of growth.

I’d like to apologize for our absence this past week. We lost two brothers that were near and dear to our hearts.

Life is made up of the sweet and bittersweet moments we’re grateful for the opportunity to experience them both, as these bittersweet moments make us cherish the sweet ones tenfold.🥹🕊
