We've promised you and here it is!! The very first in out series of
Susie's Recipe of the Month!!
Each month we will select one of Susie's recipes from her "Recipe Bible", test it out, share some limited samples in store and post it right here for you to make and enjoy at home!!
This one goes WAY back to when Susie and her husband first took over the store. Stop by, grab your supplies and surprise Mom for Mother's Day!!
Our hours this week are Wed - Friday 10-5. Please note we are CLOSED on Saturday May 9th so Emily can enjoy her first Mother's Day.
Susie's Raspberry Bars -- circa 1994
1 cup flour
1 tsp baking powder
1/2 c margarine
2 eggs
1 Tbsp milk
1/2 c Bresky's raspberry filling **
4 Tbsp melted margarine
2/3 c sugar
2 c coconut **
1 tsp vanilla **
Measure flour and baking powder into bowl. Add margarine and mix to blend butter into flour until mixture is consistency of cornmeal. Stir in 1 egg and the milk. Mix until a soft dough is formed.
Spread unto ungreased 8 or 9 inch pan, pressing with fingers to cover bottom with an even layer of dough. Spread jam over dough. Stir together remaining egg, melted margarine, sugar, coconut and vanilla. Spread on top of jam. Bake at 350 for 30 minutes or until top is lightly browned. Cool and cut into bars.
For variety, try out other Bresky's fillings, strawberry, cherry, date, blueberry, apricot, etc.
Modifications made for May 2026 recipe of the month release :
Replace margarine with butter
1 c of raspberry filling instead of 1/2 c
Use 8 X 8 pan
