Why is Chef Paul so happy? Because the soda making class for Wardensville Garden Market students went so well. Students learned first hand there is a big difference in the flavor of different sugars. They experimented with white, brown and malt sugar plus Indian jaggery. Go forth and make DIY sodas!

Always experimenting, today's Skokie dozen resulted in a new variation suggested separately by two friends, and a completely new flavor that is a definite keeper.
Next pop-up you gotta try the porcini salt bagel! Thank you in Evanston!
Our friends' suggestion is a new black n white made with blue poppy seeds and white sesame seeds.
