I had a request for an Italian creme cake and I had never made one. But it was sooo good! Definitely adding it to my flavor list. Lots of yummy almond, pecan and coconut flavors and such a moist and lovely texture.

Learned an important lesson with Saoirses birthday cake this year: lemon blueberry cake with cream cheese icing is too moist a cake to sculpt a shape out of. The head was supported by dowell rods and a cardboard cake dividers, but the cardboard got soggy and the head fell off about 10 minutes before her party. We turned the cake into a Cheshire cat and told saoirses she could have the whole head, and thankfully she was happy with that. She did an excellent job helping decorate her cake though, and named the kitty Lydia Jane Frerichs before it's untimely demise. 😸

Carrot and green goddess ricotta tart. This was soo yummy. I cooked the carrots in honey and whole grain mustard and added lots of herbs and lemon to the ricotta, then put them all on puff pastry. 😋
