I’ve really delayed in making this post. I made this cake for Mark’s mom back in September. It’s called a cartoon cake. When you design cakes, There’s a lot of thinking that goes into them before you even start, especially if you haven’t done the design before. Such as flavors, icing types, colors and thinking it out step by step of how your going to tackle it and build it. This cake was supposed to be yellow where the white is, but my first Issue was the strawberry filling bulging out of the layers. So I took all the layers (3) apart and started all over again. These are the ways you learn. So, I solved that issue but in the process, I was too panicked and didn’t want to stop to mix yellow icing. Not a huge deal. Next I decided to use cookie icing for the outlining. Cookie icing flows easier than buttercream and stretches nicely, but…it’s water based and not oil based like buttercream. Since this was a strawberry shortcake, cake, I used whipped cream icing everywhere but the outline. That also meant that I had to put it back in the refrigerator. I needed to make it 2 days ahead of time because of other commitments. When I put the cake back in the refrigerator, the cookie icing absorbed the moisture from the refrigerator and uniformly ran down the cake. I didn’t even notice it until I saw the letters. I was able to clean it up a bit, but was oh so grateful that I made it for family first. I usually always experiment first. So here are the pictures before, after and the cake I was trying to duplicate. I’ll nail the next one. I always learn so very much from my mistakes.
