New recipe::
GF/DF Strawberry Cheesecake Coffee Cake:
All ingredients at room temp.
Preheat Oven 350
Grease 9” pan (I used a springform)
Ingredients:
1 c strawberries, chopped
8 oz. DF cream cheese, softened
1 c sugar, I used white, but you could use which ever you prefer, divided (1/2c&1/2c)
2 c GF flour mix
1/2 c butter, softened
2 Lg eggs
2 t baking powder
1 t vanilla
1/2 c coconut milk
Instructions:
Cheesecake Layer:
Combine using your hand mixer, DF cream cheese, 1/2c sugar, splash of vanilla. Until it is smooth and there are no lumps. Set aside.
Coffee Cake Layer:
Combine all dry ingredients in a medium sized bowl, 2c GF flour, 1/2c sugar, 2t baking powder, sift if desired, I didn’t. Set aside.
Combine all wet ingredients in a medium sized bowl, 1/2c softened butter, 2 eggs, 1/2c coconut milk, and 1t vanilla.
Gradually add wet ingredients into dry ingredients, allowing time to mix through without over mixing. No longer than 2 minutes. Desired consistency is very little to no lumps.
Build cake:
- Put half the cake batter on the bottom of the cake pan. Even it out.
- Place cheesecake mixture on top of cake batter. Try your best to not mix the layers as your spread it over the batter, but let’s be honest, it happens and it will still be delicious, if they get mixed a little!
- Place strawberries on top of the cheesecake layer, as even as possible.
- Place the remaining cake batter over the strawberries, level it out as best as you can. I did the dollops and then spread evenly with offset spatula.
Bake for 40-45 minutes, or until a cake tester comes out clean from the center.
Glaze:
1 c powdered sugar
2 T coconut milk, more depending on brand and consistency of the milk. If it’s thicker, you will want more.
Splash of vanilla
Pour glaze over the top as soon as it comes out of the oven.
Let it set and cool at room temp until ready to serve. Refrigerate leftover (because of the eggs)!
