We first opened our doors three years ago (tomorrow 2/12, technically). It’s a reminder of how quickly time passes and how far this idea has evolved. Originally we thought a of small breadstand outside of @arturos.nj , then a bread-only bakery somewhere downtown, then a somewhat full scale bakery operation all the way on the other end of town (our next “then” is still a work in progress). Major thanks and gratitude for your support and helping us to keep doing what we love. Happy birthday to us and cheers to you ✌️❤️

Happy Sunday night, friends. We are going close for a few days and take our talents to @arturososteria to help with their reopening.

We’ll be back on Thursday with normal hours for the rest of the week. Moving forward, we anticipate closing a day or two each week for a bit. We’ll keep you posted.

We’ve been on a bit of a social media break but just wanted to check-in and say thanks for visiting, hanging out and making things feel a bit more normal.

We still have a big outdoor section that’s available everyday but we’re hoping to reintroduce tables inside over the next couple of weeks.

Our seasonal focaccia is heirloom squash with herbs and parmigiano.

Caraway rye was on the first version of our opening menu (and one of the breads that I was most excited about). Unfortunately, after a ton of test runs, we were not achieving the results and balance that we were looking for. Two years later we have finally achieved a pretty decent version and we’re happy to share it. Caraway rye batards, available every day : )

An idea that was years in the making advanced three years ago when we found our space and then became a reality two years ago when we opened our doors.

Our original idea was to find a space where we could bake bread to sell at a bread stand outside of @arturososteria We thought it would be a simpler way for us to bake some bread and sell a few loaves each day (that’s how we landed on our name). Keep it simple, we thought.

As we continued to dive deeper into our creative process, we realized in order to accomplish both what we really desired and what we were capable of accomplishing, that we needed to open a small bread bakery.

Suddenly, keeping it simple became opening a bakery despite not feeling like we were ready for it. While we knew very little about laminating dough, bread baking equipment and making oat milk lattes, we knew that we were already able to produce solid bread with limited baking resources at Arty’s.

We repeated something that we often say when we’re toeing the line on a decision: “let’s do it”

Construction is generally not the most romantic process but this one was especially challenging. Aside from the predictable unforeseen setbacks (and strange things that are found in a liquor store that had been closed for years), we experienced major second thoughts that almost stopped the project -“is that still maplewood”, “there is no foot traffic”, “why not open in a nicer town” are small examples of what we heard as word spread that we were doing a bakery on Boyden Ave. While it shook us for a bit we ultimately used that underdog energy to push forward and bring this idea to life.

One of our core values at both places is that we strive to make our small slice of the world a better place -through food, empathy and pride. The joy that our humble bakery has brought to us and our community is hard to capture in words. A bakery has a uniquely special relationship with the community that it serves and we have completely embraced that.

While it’s already been two years, it feels like we’re just getting started. Major thanks to the entire day 1 team, partners, friends, families and YOU for helping us to get to this point. You go out of your way to see us everyday and we are forever thankful for that. It’s a big part of what continues to inspire us.

Our pasty oven went down again this morning and we’re pretty bummed about all of these prepped and uncooked pastries. Double unfortunate is that the part we need will not arrive from France until the end of next week.

We’ll adjust on the fly just like pretty much each day of the last six months. *No pastries for most of next week*. Extra bread, extra toasts, extra focaccia and plenty of coffee and other refreshing beverages.
