Einkorn is the most ancient form of wheat grown by humans. While it isn't the oldest grain on earth—cereals like millet, sorghum, and barley are estimated to have earlier or similar wild origins—einkorn is the oldest wheat and retains its pure, unhybridized genetic makeup.
Modern bread wheat has been heavily hybridized over thousands of years to contain 42 chromosomes. Einkorn, however, remains a diploid plant with only 14 chromosomes—exactly as it was 10,000 to 12,000 years ago.
