Instead of doing a flashback of all my cakes, cookies, and other treats; I figured I would do a flashback of my family at the bakery over the last eight years. This is my last week in my bakery after almost 8 years in business and more than 9 years of working, dreaming, and building Carlito’s.🥹❤️

I’ve thought a lot about everything I could’ve done differently. Maybe I could’ve worked harder. Maybe I could’ve posted more, promoted the bakery more, or taken more chances. There are definitely things I wish I had done differently.

But I also have to remind myself that I did something pretty incredible. I built a business from the ground up, poured my heart into it for almost 8 years, and kept going even when things weren’t easy.

I’m proud of what I created. I’m proud of how far I’ve come. And even though closing this chapter is heartbreaking, but for now, I’m just going to take it all in, be grateful for the memories, and say goodbye to a place that was such a huge part of my life. ❤️

The viral Cédric Grolet-inspired mousse desserts! 🍓✨ These little fruit-shaped treats are almost too pretty to eat, with smooth raspberry mousse and raspberry filling inside, coded with the crunchy white chocolate shell. Definitely one of my top seller — Raspberry pistachio 🤤🍓💚

Raspberry Filling
This half recipe makes a perfect amount for home baking.

Ingredients
12 oz frozen raspberries
½ cup granulated sugar
1 tbsp lemon zest + juice
2 tbsp water
2 tbsp water, reserved for cornstarch slurry
1½ tbsp cornstarch
1 tsp vanilla extract or vanilla paste

Directions
Add the raspberries, sugar, lemon zest, lemon juice, and 2 tbsp water to a saucepan.
Cook over medium heat until the raspberries break down and the mixture begins to simmer.
Mix the cornstarch with the remaining 2 tbsp water to make a slurry.
Slowly stir the slurry into the raspberry mixture and cook until thickened.
Remove from the heat and stir in the vanilla.
Allow the filling to cool completely before using. - fill up silicone mold with raspberry filling and freeze until solid.

🤍 White Chocolate Mousse
Ingredients
1⅓ cups (215 g) good-quality white chocolate
1½ cups (360 ml) heavy whipping cream, divided
(180 ml) for the ganache (180 ml) for whipping cream (3/4 cup each)
¼ cup (30 g) powdered sugar
1 tbsp cream cheese, mascarpone, dry milk powder, or white chocolate pudding mix (for stabilization)
OR 1 packet of gelatin
1 tsp vanilla paste or 4 ml vanilla extract
Pinch of salt
3–4 tbsp raspberry filling, or up to ¼ cup, depending on how strong you want the raspberry flavor Directions
1. Make the white chocolate ganache
In a microwave-safe bowl, combine ½ of the heavy cream (180 ml) with the white chocolate. Microwave at 50% power for about 2 minutes, stirring every 30 seconds and adding additional time if needed until completely smooth .
2. Whip the cream
Pour the remaining 180 ml heavy cream into a chilled mixing bowl. Beat on high with an electric mixer until stiff peaks form, about 3–5 minutes.

Nothing better than homemade banana bread 🤎🍌 Especially when those bananas are way too ripe to eat 😂
Soft, moist, and made from scratch. The perfect way to use up those leftover bananas!

🍌 Chocolate Chip Banana Bread 🍞

Ingredients
¾ cup melted butter — 170 g
1 cup packed brown sugar — 223 g
⅓ cup + 1 tablespoon granulated white sugar — 72 g
3 ripe bananas, mashed — about 1¼–1½ cups
2 large eggs
1¼ teaspoons vanilla extract or vanilla bean paste — 6 g
1 teaspoon molasses — 6 g
2 cups all-purpose flour — 250 g
1 tablespoon cinnamon — 8 g
1 teaspoon baking soda — 5 g
¾ teaspoon kosher salt — 5 g
½ cup buttermilk — 4 oz / 113 g
1¼ cups dark chocolate chips — 200 g

🥣 Instructions
Preheat your oven to 350°F (175°C). Grease and line your loaf pan with parchment paper.

In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until well combined.
Add the mashed bananas, eggs, vanilla, and molasses. Mix until combined.

Stir in the buttermilk.
In a separate bowl, whisk together the flour, baking soda, and kosher salt.

Gently fold the dry ingredients into the wet ingredients. Be careful not to overmix.

Fold in the dark chocolate chips, reserving some for the top.
Pour the batter into your prepared loaf pan and sprinkle the remaining chocolate chips over the top.

Bake at 350°F until golden brown and a toothpick inserted into the center comes out with a few moist crumbs. Start checking around 50 minutes.
Allow the banana bread to cool in the pan for 10–15 minutes, then transfer to a wire rack.

✨ Tip: Add a few extra chocolate chips on top right before baking for those gorgeous melty chocolate pools when you slice into it! 🍫🍌

🍒❄️ **Homemade Cherry Limbers!**

No artificial coloring. No artificial flavors. Just simple ingredients and lots of cherry goodness! ❤️ These are more of an **icy-style limber**, perfect for a hot day.

**Ingredients:**
• 4 cups water (bottled or tap)
• 1 jar maraschino cherries
• 1 cup cherry juice
• 1 cup granulated sugar

**How to make them:**
Add everything to a blender and blend until smooth. Strain the mixture if desired, then pour into **7 oz plastic cups** or disposable popsicle/limber bags. Freeze overnight and enjoy the next morning! 🍒❄️
