Vegan Cheddar Herb Biscuits
Ingredients
2 cups all-purpose flour
1 tbsp baking powder
1 tsp baking soda
½ tsp salt
1 tsp garlic powder
½ tsp onion powder
1 tbsp dried herbs (rosemary, thyme, parsley, or Italian blend)
½ cup cold vegan butter (cubed)
1 cup unsweetened plant-based milk (soy, oat, or almond)
1 tsp apple cider vinegar or lemon juice
1 cup shredded vegan cheddar cheese
For the Garlic Herb Butter Topping
3 tbsp melted vegan butter
1 clove garlic, finely minced (or ½ tsp garlic powder)
1 tsp dried parsley
Instructions
Step 1: Prepare the Vegan Buttermilk
In a small bowl, combine plant-based milk with apple cider vinegar or lemon juice.
Let sit for 5 minutes to curdle slightly.
Step 2: Mix Dry Ingredients
In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, garlic powder, onion powder, and dried herbs.
Step 3: Cut in the Vegan Butter
Add cold cubed vegan butter to the flour mixture.
Use a pastry cutter or fork to cut it in until the mixture resembles coarse crumbs.
Step 4: Add Wet Ingredients and Cheese
Stir in vegan cheddar cheese.
Pour in vegan buttermilk and gently mix until just combined (do not overmix).
Step 5: Shape and Bake
Preheat oven to 425°F (220°C).
Line a baking sheet with parchment paper.
Scoop about ¼ cup of dough for each biscuit and drop onto the sheet (makes 8–10 biscuits).
Bake for 12–15 minutes, until golden brown.
Step 6: Brush with Garlic Herb Butter
In a small bowl, mix melted vegan butter, garlic, and parsley.
Brush over hot biscuits right out of the oven.
Serving Suggestions
Perfect as a side for soups, chili, or pasta.
Slice open and stuff with sautéed veggies for a quick savory sandwich.
