We are an ongoing family owned and operated business located in the Green Mountains of Vermont. Our seitan is handcrafted from scratch in the traditional way. The wheat is custom stone milled just for us using only hard red spring wheat kernels. The flour is mixed with pure well water and kneaded thoroughly before rinsing to remove the starch from the dough. The raw seitan is stored overnight to l

et it settle, cooked in a broth of soy sauce and well water, and seasoned with garlic and cayenne. The result of all this tender loving care and hands-on attention is the best tasting and most appealing seitan you could ever imagine. Without exaggeration, it is like no other prepared seitan or seitan mix available. Years of perfecting the process and careful selection of 'just the right wheat' makes our seitan a "truly exceptional product"! When you do just one thing, and do it with love and devotion for many years, the difference in quality is sure to show. Seitan (also called sukiyaki fu) was first manufactured in ancient China for the Emperor, who would eat it during his yearly week long meat free fast. It later became popular in the 1970s due to a growing macrobiotic movement. In recent years, seitan has become less popular due to so many seeming to have difficulty digesting gluten. We believe this has more to do with all the GMO wheat out there than with pure gluten, as our customers have been enjoying our GMO free and organic seitan for 3 decades with no problems.
