Butter Pecan Cake continued with recipe
Cake
3T butter
1 1/2c chopped pecans
1c sugar
1/2c brown sugar
3 eggs
1t vanilla
1/2c oil
1c buttermilk
1/4c milk
2 1/4c cake flour
1T baking powder
1/2T baking soda
1/2T salt
Melt butter add chopped pecans and cook 3-4 minutes, cool completely.
Cream sugars, eggs, oil and vanilla. Combine dry ingredients and add to creamed mixture alternating with the milks, start and end with dry ingredients. Pour into 2 parchment lined and greased 8 inch pans or 3 6 inch pans. Bake 350 20-25 minutes, until cakes spring back when touched.
Cool and Frost: 1c butter, cook butter until turns brown and smells nutty, cool completely. Mix cooled butter, soft 12 ounces of cream cheese and 1 1/2t vanilla until creamed, add 5c powdered sugar. Toast pecans for sides and top of cake. Frost cake and decorate with pecans. Slice add nd enjoy!
