We have an abundance of fresh eggs from Joe's farm where he rescues all sorts of fowl in Po***ck Pines. This week alone we received a whopping 1,482 eggs from his flocks - duck, turkey, and chicken eggs! Not only do we cook with these fantastic eggs, we also have available flats of 30 eggs for $20 to purchase.
Quail eggs are available upon request.

March 2026 Recipe of the Month: Colcannon
For St Patrick's on Tuesday, I wanted to find some fun traditional Irish dishes that would make for a lovely meal. One that I found is called Colcannon. And to my surprise, I'd made this dish before by accident.
Colcannon is a traditional Irish dish of creamy mashed potatoes mixed with cabbage or kale, and often includes butter, milk or cream, and onions, leeks, or scallions. It's a hearty, rustic comfort food.

Ingredients:
3 large Russet potatoes, about 2 lbs
1 tablespoon plus 1 tsp Kosher salt
6 tablespoons Kerrygold unsalted butter, divided
3 leeks, cleaned and thinly sliced
3 cups green cabbage, finely chopped
1 bunch scallions, chopped and divided
2 cloves garlic, minced
1 cup half and half
1 cup Tipperary vintage Irish cheddar cheese, shredded
1/4 tablespoon black pepper

Directions:
Wash, peel, and roughly chop the potatoes. Place them in a large Dutch oven then cover with water and 1 tablespoon of salt. Bring them to a boil over medium-high heat and cook until tender, about 15 minutes. Drain the potatoes in a large colander then set aside.
Melt 4 tablespoons of the butter in the empty Dutch oven over medium heat. Add the leeks, cabbage, 1 cup of the scallions, and garlic and saute while stirring often until softened, about 10 minutes.
Reduce the heat to medium-low and add the half and half, cheddar cheese, teaspoon of salt, and pepper. Cook until warm and the cheese is melted, about 3-4 minutes. Turn off the heat.
Add the potatoes to the pot and mash or whip using handheld beaters until the mixture is well combined and no potato lumps remain.
Transfer the Colcannon to a serving dish. Create a well in the center with the back of a spoon and top with the remaining 2 tablespoons of butter and scallions. Serve warm.

We will be bringing our Curried Chicken Salad Sandwiches with sun-dried cranberries and fresh apple, Flame Seared Red Pepper Bisque with Smoked Gouda, and Roasted Butternut Squash and Leek soup. All our soups are served with bread and butter, our sandwiches are served with Sesame Seed Crunch Coleslaw.

January 2026 Recipe of the Month: Sheet Pan Greek Chicken Meal
It is winter. The days are short, cold, and personally I am too tired to entertain the thought of a complex recipe for dinner. This recipe for a one sheet pan oven baked meal can be prepped in about 15-20 minutes and once it is in the oven you are done. All you have to do is pour yourself a glass of wine and wait forty minutes for a fabulous supper.

Heat the oven to 425℉.

Chicken Marinade:
2 tablespoons finely grated lemon zest
2 tablespoons freshly squeezed lemon juice
2 cloves garlic, minced
3 tablespoons olive oil
2 teaspoons dried oregano
1 teaspoon salt
1 teaspoon paprika
1/4 teaspoon freshly ground black pepper
Mix all in bowl.

6 bone-in, skin-on chicken thighs
Method:
Pat chicken thighs dry with paper towels. Use your fingers to gently loosen and pull the skin away from the meat without removing it. Add to the bowl and rub all over with the lemon mixture, working it gently under the skin. Let sit and marinate at room temperature while you heat the oven and prepare the vegetables.

Vegetable Marinade:
3 tablespoons freshly squeezed lemon juice
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Mix all in bowl

Approx. 1 lbs Yukon Gold or red potatoes, thinly sliced no thicker than 1/4 inch
2 cups grape or cherry tomatoes, halved
1 medium red onion, halved and sliced into 1/2-inch pieces
1/2 cup large crumbles feta cheese
1/2 cup pitted kalamata or castelvetrano olives
Finely chopped fresh dill or parsley leaves, for garnish (optional)

Method:

Toss potatoes, tomatoes, onion, feta cheese, pitted olives, remaining olive oil, lemon juice, salt, and black pepper together on a rimmed baking sheet. Arrange into an even layer.

Nestle the chicken skin-side up into the vegetables. Roast until the chicken registers at least 165ºF on an instant-read thermometer and the potatoes are tender, 35 to 40 minutes. Garnish with finely chopped fresh dill or parsley if desired.

The days are short, and our hours are trimming down too. We'll be open from 6:00-1:30 Thursday thru Monday for the winter. We hope to see everyone come in for their hot coffees or cocoa to warm up as we brave the winter together. Definitely looking forward to spring and everything it has to offer!
