🍒 Shirley Temple Cupcakes 🍒
These are another fan favorite!
An homage to the delish drink that's usually made with lemon-lime soda, grenadine, and maraschino cherries.
All those elements are in this cupcake!
I add a shot of grenadine into the cupcake then pipe on grenadine buttercream and garnish with a maraschino cherry and candy pearls to class it up and set it apart 😉 💎

🍓Strawberry Cupcakes🍓
A fan favorite!
It's made with a fresh strawberry puree reduction, this cupcake is light and gently sweet with just the right amount of strawberry that comes through.
It's then topped with strawberry cream cheese buttercream made with freeze dried strawberries for an almost strawberry cheesecake like flavor 🤤

My favorite to decorate!
Based on my favorite special non alcoholic drink!
I prefer it with ginger ale so I start with a ginger beer cake injected with grenadine and frosted with a grenadine buttercream.
I then garnish it with candy pearls and a maraschino cherry!
Those candy pearls are a pain in my hand (see stories).

Todays bakes for the next few days of orders! When I say I make things fresh and from scratch, I'm not ever kidding. Red velvet is the only exception to my non use of artificial colors whenever possible.

Hello and good morning!

I've been wanting to do an intro post for months now but haven't been able to actually sit down and really do it. So here I go!

I'm Katie. The sole owner and operator of Cupcakes by Katie. Every aspect of this business has been built by these two hands right here. Countless hours of planning, thought, imagination, education, soul, and love have turned this idea into a dream pursuit of more and better scratch made sweets for you all. The space in the picture is where all the magic happens! I'm not a commercial bakery but I make due with what I have in my home kitchen.

The seed was planted on my first mother's day when I got a cupcake recipe book as further inspiration for my then pinterest obsession with cupcake recipes. I tried out a few and was instantly hooked.

Since then, life has taken me on a wild ride. A few months after mother's day, I had to move and get a steady paycheck kind of job for a while. Then I moved again. About a year later, I had the opportunity to leave the aforementioned job and quickly got pregnant with my second child (that was a rocky time). A few years later, I had to move again (another rocky time) but decided to live the single parent life and moved back a year later, but into my grandmother's house. I ended up being her fulltime caregiver for two years (she has dementia so I didn't have the time or energy to put much into CbK). Eventually, we had to move her into a residential care facility for her own safety (she was a fall risk, combative, and completely unable to do anything for herself let alone remember anything that was required to do so). I took that summer off (2019) for the most part to recover from the two years of consistent and ever increasing abuse and really allow myself some time to process and get in touch with who I am again and start being more accessible and present for my kids. I jumped into keeping myself a little too busy but was more interested in helping others than really confronting my new reality.

Fast forward to 2020. If this were a Friends episode, it would be called The One With the Cover Letter.

I'm here and I'm proud.

Hey graduate,
You did it.
I'm so proud of you.
You should be proud of yourself.
I've been thinking back to my own high school experience. I'm so grateful to a select few teachers for helping to guide me through a relatively tough time in my life.
I would love to give away some single layer cakes or 4-packs of cupcakes to those of you that may not have people to celebrate with. Or to those of you that really need one thing that's yours in this time of uncertainty. Or to those of you that want to celebrate you finally being able to be your true self. Or to those of you who have felt alone for the last 2-4+ years and would love some love. Or to those of you who may not be able to afford it.
I'm grateful to be able to offer this so please don't hesitate to reach out. As much as I'd love to, I can't feed everyone. I'm only one person with two hands, one mixer, and one oven. I know I can make a difference though. Even if it's just for one person.
If you would like to surprise or nominate someone you know and love, please feel free to submit those to my DMs.
This is is open to all current graduates in SLO County from the . I'll be taking orders for the next few weeks.
If you'd like it to stay anonymous, feel free to text me what flavor you'd like, where, and when. I'll need at least a few days to get them baked and frosted so please try and think ahead.
