NEW Cake… THE GORDON = Valrhona Dark Chocolate Cake, Heering Cherry Compote, Whipped Vanilla Bean Cream Cheese, Whipped Cream (not too sweet)
I wanted to make a dear friend (Gordon) his ultimate dream cake. When I asked him about his favorite cake, he said “Black Forest". Challenge accepted!
Although I couldn’t remember the last time I had this cake (maybe first grade?), I was determined to make a blow your mind delicious Black Forest cake!
I loved the entire process of coming up with this cake… the research, imagining, experimenting, tasting, revising, and final presentation.
And the most important part… Gordon loved his cake! He also said I could bake this same cake for anyone else who might like this take on a Black Forest cake.
I can’t wait to bake more of these!

If interested, just thought I’d share a little bit about how I approached this cake:
- Heering Cherry Compote: I tackled the filling first. What flavors to pair with fresh summer cherries? Kirsch is traditionally used, but I thought it might be a bit harsh and bitter for the compote. Have you tried Cherry Heering? It’s all natural with a wonderfully balanced and rich flavor. Since 1818, it’s been made from an old family recipe using only real cherries and botanicals.
I slow cooked just harvested organic cherries with Cherry Heering and a bit of fresh lemon for brightness and almond for added depth.
WOW! This compote is really delicious. Its inspired me to start playing with some other cakes that would go well with it… a soft, slightly sweet corn cake and an almond cake with a crisp, crunchy roasted almond crust. But back to the Black Forest…
- Valrhona Dark Chocolate Cake: Experimented with different chocolate %s and cake textures. Valrhona is my favorite baking chocolate. This chocolate pairs amazingly with the cherry compote. And the tender cake brings together the whipped vanilla bean cream cheese, luscious cherry compote, and light whipped cream frosting.
