'Frieda' did good! 🙌 We just need to split the dough into two baking pans 🙈 next time.

When you want more 'flesh' in each bite, use more dough ler loaf like we did in the picture.

More a fan of airy Foccacia?
Use two pans and have a loaf to share or freeze.

Testing result: 🤩 Cinnamon Swirl Foccacia - made with our Frieda.

Goal was a sweet-ish bread without being cake-sweet. And I only used olive oil, no butter.



Frieda - our carefully dried sourdough starter is sooo easy to handle and maintain. 🙌

We only feed it once in a week or two.

Sometimes 'basic' is just enough. I admit, although I love to see all the art of scoring amd how baked results come out - I am not patient enough and often too lazy 🙈😂

For best results - Choose:

High quality (organic) flour,
Salt without anti-caking agents
Pinch of yeast, sourdough or both,
AND time.

That's the formula to achieve tasty loaves.

Long Fermentation - is not just about making better bread,

it also enhances the whole eating experience. 🙌

A fermentation of at least 6-8 hrs improves:

- Flavor Profile
- Texture
- Digestibility
- Nutrition Absorption
- supports lower blood sugar levels..

Time, the most valueable asset in making bread.

Unfortunately, the commercial versions do usually not honor such old traditions.

Using enhancers to speed up production and improvers to make up for the lack of time used.
