(4 of 4) So I have a big announcement - after years of feedback and pivots, it is time for us to invest in making our original vision FULLY come to life. We have decided to move The Walk In into our space at the bakery, to absorb some components of the bakery program into The Walk In, and to renovate The Stumble Out dining floor to allow for more indoor seating. Reclaiming the space at Neon is going to allow us to run production out of a significantly larger kitchen, to provide a better and more complete service, to be the polished bistro we want to be at Stumble Out - it will consolidate our businesses and radicalize how we are showing up for our customers. It will protect the businesses we have worked our whole lives to build.
We won’t return in 2024 as The Neon you know but many elements of this bakery will stay. There will still be some Neon fan favorites on the counter, a truly endless supply of biscuits, and every bread we use at every business still baked in house. Details are in short supply here, I know, because as a small business owner in a highly seasonal place you have to stay humble to fate. We signed a lease for a bistro two months before a global pandemic struck. We are not pastry chefs but made my and many others’ favorite croissant of all time happen. We’ve won tons and lost plenty. What does tomorrow hold for us? Just showing up for you, over and over again. This year is going to redefine us, we’re going to dedicate ourselves in new and more effective ways, we’re going to tweak some things, we’re going to amplify all the best parts of ourselves. It is the end of an era at The Neon Croissant, and tremendous improvement for The Walk In and The Stumble Out awaits. We can’t wait to become something new and improved for you… again. Thank you for your steadfast support in every endeavor we’ve ever pursued - it allows us to step more into our power year after year. We are going to knock your socks off in 2024. This will always be the house that The Neon Croissant built. ♥️
