(4 of 4) So I have a big announcement - after years of feedback and pivots, it is time for us to invest in making our original vision FULLY come to life. We have decided to move The Walk In into our space at the bakery, to absorb some components of the bakery program into The Walk In, and to renovate The Stumble Out dining floor to allow for more indoor seating. Reclaiming the space at Neon is going to allow us to run production out of a significantly larger kitchen, to provide a better and more complete service, to be the polished bistro we want to be at Stumble Out - it will consolidate our businesses and radicalize how we are showing up for our customers. It will protect the businesses we have worked our whole lives to build.

We won’t return in 2024 as The Neon you know but many elements of this bakery will stay. There will still be some Neon fan favorites on the counter, a truly endless supply of biscuits, and every bread we use at every business still baked in house. Details are in short supply here, I know, because as a small business owner in a highly seasonal place you have to stay humble to fate. We signed a lease for a bistro two months before a global pandemic struck. We are not pastry chefs but made my and many others’ favorite croissant of all time happen. We’ve won tons and lost plenty. What does tomorrow hold for us? Just showing up for you, over and over again. This year is going to redefine us, we’re going to dedicate ourselves in new and more effective ways, we’re going to tweak some things, we’re going to amplify all the best parts of ourselves. It is the end of an era at The Neon Croissant, and tremendous improvement for The Walk In and The Stumble Out awaits. We can’t wait to become something new and improved for you… again. Thank you for your steadfast support in every endeavor we’ve ever pursued - it allows us to step more into our power year after year. We are going to knock your socks off in 2024. (3 of 4) Our business pivoted again at the end of 2021 when we had the opportunity and the funds, thanks to your loyal support, to build out the bar in The Walk In and add our dinner service at The Stumble Out. The Stumble Out represents our LIFELONG DREAM, the business we imagined owning and operating when we signed the lease for the space at 67 Main, before covid redefined our concept’s viability. Erin was so high on life to get back to her original vision for our business - a cozy and intimate bistro serving innovative bar fare backed by a great selection of our favorite spirits and wines from around the world. Our friend Mike Misner, everyone’s friend, texted us a picture of someone’s basement bar in Poughkeepsie posted on Facebook marketplace, and we just went gangbusters on executing our vision with that as the heart of our whole design plan. We couldn’t believe we finally went full circle back to owning exactly the restaurant we had always dreamed of. And you started showing up in droves again, to support us in our next endeavor. How lucky are we? Support at The Walk In, at Neon, at Stumble. Everything firing on all cylinders because of you. If anything has been made clear through the years, it’s that you want more and more. And we want to give more and more.

(2of 4) Then we opened Neon. Did you catch when I mentioned before that despite working in the food industry for our entire lives, we had never worked in a bakery? Our learning curve was a learning mountain. Each 72 hour process (and there are a lot of them in a bakery) was rehearsed, examined, dissected, reevaluated, manipulated, perfected. We spent hours with our heads buried in cookbooks, talking with pastry chefs, on phone calls with Erin’s dad Bill (The Donut Man, yes a proper noun), and on YouTube watching pastry and bread videos. We became insufferable at dinner with friends - EVERY conversation came back to proofing, shaping, rising, temperature, humidity, pastry folds. We weren’t just born with this knowledge for pastry and bread and sweets and more. We worked so hard at getting here, and our team is producing some of the best treats and sweets and more that I’ve ever had at any bakery on the planet. You’ve had my mom’s carrot cake on your table for Thanksgiving and Christmas! Do you know how special that is? Our life has been tied up in this bakery, our memories live here, we’ve shared experiences with you through food which is the most precious thing in the world to us. We’ve gotten messages from you in world class bakeries in France, California, Mexico, Spain, Hong Kong only to report that you think our sourdough or croissants or key lime pies are better. That level of inspiration endures a lifetime, it is all the fuel we need to do this every day forever. It’s not about being the best or the favorite, it’s about being that special to YOU. (1 of 4) We put in our offer on this bakery in 2020, peak pandemic, before we had even successfully opened across the street. A condition of our purchase was that Errol and Sarah of Brandenburg would allow us to shadow them for a day. They obliged and it was so insightful as neither Erin nor I had ever worked in a bakery before. During the shift, a delivery of flour arrived - several hundred pounds. Errol was flinging 50 pound bags of flour all around the bakery and making it look easy. On the way home, I had a panic attack and said to Erin ‘I think we should take the offer off the table, I’m a small woman, I can hardly lift a single bag, I don’t think I can do this.’ You know how this story ends - Erin gives me a pep talk, we buy the bakery, and now I have Errol super strength. I can’t tell you how proud I am of us for pushing through, how proud I am of myself for proving that I am so much stronger than I ever knew I was before.

We opened The Walk In in February 2021. What we previously imagined would be owned and operated solely by myself and Erin… were we insane?… became so much bigger. There was demand we NEVER could have anticipated - for service, a bigger menu, a seating area, food storage, catered events, for BISCUITS. The Neon Croissant, though it was not yet open, became the foothold for our entire operation. While I was still overcoming my flour induced anxieties, we were so relieved our gut had led us to buy the only building we had the opportunity to buy on Main Street, right across the road from our booming business.
