I’ll be out of town in mid-May, so if you’re thinking of stocking up, now’s the time—it freezes beautifully! You can slice it before freezing or keep it whole. If sliced, just pop it in the toaster straight from the freezer. If freezing whole, let it thaw on the counter, run it under a little water, then warm it in a 400° preheated oven for 10–15 minutes.
