Good Morning, All! Had a Great weekend at the Shoppe! Today is Monday.....Day Off Day! Ha! So grateful to be feeling so well-bodily and mentally....lost some weight in amidst of the barrage of sugar products which, by the way, I am leaving to more saner people who can handle them these days. My mind is already wandering towards Halloween baking and decorations. I LOVE Halloween! In a couple of weeks I will decorate my failing flower garden with a graveyard scene. More, much more about that later. This weekend was the beginning of my pumpkin phase......pumpkin chocolate chip cookies, oatmeal pumpkin cream cookies, pumpkin whoopie pies, pumpkin pie, pumpkin muffins, pumpkin spice braid and I even added a smidgen of pumpkin puree to my cheese danish, giving it a hint of cheesecake attitude. There are so many new and old pumpkin recipes out there! Want to try 'em all. Later.

Hi Folks, These past 2 weekends I have been Double-duty Baking.....for my Shoppe and for the Steep Falls Farmers Market. Extra work to be exact but well worth the effort. The special orders have increased......mostly Whoopie Pies.. I love that people love my whoopies. Yesterday got an order for 140 different kinds of whoopies (pumpkin, maple, apple and chocolate) for the Fryberg Fair. Can't believe that the summer is nearly over and the big fair is almost here. Yesterdays weather didn't indicate an end to the season. I'm melting. Still gotta go put the oven on and get busy!

Having the sweet tooth I do, I am always up for the challenge. Today I took leftover biscuits and cranberries (which I had bought up during the holidays and frozen) and combined for my version of bread pudding, simply delicious!

Cranberry Bread Pudding

5-6 biscuits, crumbled
1 1/4 C. whole cranberries, fresh are thawed
3 eggs
1C. milk
1/2 C. sugar (with cranberries you really do not want to sweet)
1/2 tsp. vanilla

Spray a medium size casserole, not quite a 9x13. Combine the crumbled biscuits and cranberries and place in dish. Combine remaining ingredients and pour over the top. Cook at 350 degrees for 35 minutes. Turn on the broiler and cook for 2-3 minutes. Serve with vanilla ice cream.

I've been trying out recipes for Christmas and honestly, this one may not make it through the night. Oh my goodness is this good!

Pecan Pie Bars
1 can crescent rolls (they now make it without seams)
1/2 cup chopped pecans
1/2 cup sugar
1/2 cup corn syrup
2 Tbsp butter or margarine, melted
1 tsp vanilla
1 egg, beaten

Heat oven to 350°F.
Unroll dough and press in bottom and 1/2 inch up sides of a 9x13-inch pan. Firmly press perforations to seal. Bake 8 minutes.
Meanwhile, in medium bowl, mix remaining ingredients. Pour filling over partially baked crust. Bake 18 to 22 minutes longer or until golden brown (mine took exactly 20 minutes).
Cool completely, about 1 hour, and cut into bars.

Now I understand why the reviews on these crackers call them addicting...they totally are! I haven't been able to stop eating them since they came out of the oven.

Crack-Tastic Crackers

1 1/2 sticks butter, melted
1 packet ranch dressing mix
2 T. red pepper flakes
1/2 tsp. garlic powder
2 sleeves saltine crackers
parmesan cheese

In a large bowl combine melted butter, dressing mix, pepper flakes, and garlic powder. Add crackers, 1 sleeve at a time, and gently with your hand toss to coat the crackers. Let sit in the bowl while the oven preheats to 250 degrees. Line a large cookie sheet with tin foil. Spread crackers out on tin foil and bake for 15 minutes, remove and sprinkle with parmesan cheese and turn the crackers over. Sprinkle with more cheese and return to over for 10 minutes. Enjoy!
