On the second day of , my starter made for me… a dozen fluffy muffins! No crumb shot since these are to be gifted, but I can attest to their light-as-air nature (aka evidence of all the nooks and crannies inside). These partially whole wheat and rye English muffins are a particular favorite recipe of mine, to make and to eat. As soon as I upgrade my griddle game, they’ll be on the menu for local pickup!

Coming soon to the menu… Chunky Sourdough Granola!

This is one of my favorite and most often made and eaten sourdough treats. Left in big chunks, it makes for a great finger-food snack, or break it into smaller bits over greek yogurt and berries for a just-sweet enough breakfast or midday pick-me-up. It’s made with oats pre-fermented by leftover sourdough starter (aka “discard”), naturally sweetened with honey and maple syrup, and full of lots of different seeds and nuts for so much texture and good-for-you nutrition. It’s ! To join in this annual celebration of additive-free bread and its bakers, I baked my first (partial) Einkorn flour loaves. It doesn’t get more than naturally-leavened loaves using an ancient grain (the only never-hybridized wheat).

I also continued experimenting with the cold start baking method. The lighter loaf was baked from cold, 55 minutes at 475F, and the dark loaf was baked in the preheated pan (475F preheat for 1 hour, 30 minutes at 475F top on, 15 minutes at 425F top off). My shaping and scoring lacked some finess as I adjusted to the different (stickier) texture of this flour mixture, but I’m pretty happy with the crust and crumb for a first attempt. The crumb is so wonderfully soft and spongy. I’m looking forward to working more Einkorn into my bakes and eventually adding this to my menu for local pickup!
