Sweet Potato Cinnamon Roll Bake
Ingredients:
- 2 medium sweet potatoes
- 2 tablespoons unsalted butter, melted
- 1/2 cup brown sugar, packed
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup milk
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 cup chopped pecans (optional)
- 1 cup powdered sugar
- 2 tablespoons milk (for icing)
- 1/2 teaspoon vanilla extract (for icing)
Directions:
1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish and set aside.
2. Start by peeling and cubing the sweet potatoes. Place them in a pot of boiling water and cook until tender, about 15 minutes. Drain and let cool slightly.
3. In a large mixing bowl, mash the cooked sweet potatoes until smooth. Add the melted butter, brown sugar, vanilla extract, ground cinnamon, ground nutmeg, and salt. Mix until well combined.
4. In a separate bowl, whisk together the milk and eggs until fully incorporated. Gradually add this mixture to the sweet potato mixture, stirring until smooth.
5. In another bowl, combine the all-purpose flour, baking powder, and baking soda. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
6. If using, fold in the chopped pecans into the batter.
7. Pour the batter into the prepared baking dish, spreading it evenly.
8. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
9. While the bake is cooling, prepare the icing. In a small bowl, whisk together the powdered sugar, 2 tablespoons of milk, and 1/2 teaspoon of vanilla extract until smooth and pourable.
10. Once the Sweet Potato Cinnamon Roll Bake has cooled slightly, drizzle the icing over the top, allowing it to soak in and create a beautiful glaze.
