Merry Christmas, sugar! If you need a quick, low-message breakfast option for the family on Christmas morning, try these sheet pan pancakes! Great for a crowd, and you can change up the flavors as needed. I made two cinnamon swirl quadrants, one plain, and one chocolate chip. This recipe was adapted from recipes online: Feel Good Foodie’s “Sheet Pan Pancakes” and The Idea Room’s “quick and easy homemade cinnamon swirl pancakes.”
* 2 ½ cups AP flour
* 2 tablespoons white sugar
* 2 tablespoons baking powder
* ½ teaspoon salt
* 2 cups milk - 1 tablespoon
* 1 tablespoon lemon juice
* 4 tablespoons melted butter
* 2 eggs
* 1 teaspoon vanilla extract
* Toppings of your choice
Cinnamon swirl mix in
* 2 tablespoons melted butter
* 1/4 cup brown sugar
* 1 teaspoon cinnamon
* 1 tablespoon flour
INSTRUCTIONS
* Preheat the oven to 425°F degrees. Line a 13×18 baking sheet with parchment.
* Mix the lemon juice in with the milk to create a buttermilk alternative, let sit for five minutes. In a large bowl, whisk together the flour, sugar, baking powder and salt. Make a well in the center of the dry ingredients and slowly whisk the milk, eggs, melted butter and vanilla extract into the dry ingredients until well combined; some lumps are fine.
2. Make the Cinnamon Swirl mixture and place it into a a small bottle with a squeeze bottle or a small baggie with a snip in the corner.
* Pour the pancake batter onto the prepared pan, spreading evenly. Immediately swirl the mixture into one or more quadrants of your pan.
* Sprinkle your toppings in separate quadrants. Bake until golden brown, 15-17 minutes.
* Divide into 12 portions and serve immediately with maple syrup, if desired.
