I love making cakes for big celebrations, especially when they are as important as my parent's 50th wedding anniversary! My family is the most important thing to me and there are a lot of us! My parents don't like a fuss to be made about them but I kind of insisted on making them a cake. At first it was going to be several tiers and dripping in gold decorations but as I started thinking about my parents and their tastes, we went a totally different direction....

My mom and dad have birthdays that are three days apart. Their birthdays are also at the end of a very busy birthday month which basically means they never want cake and they usually celebrate it together. When I asked my mom what dessert she wanted for Mother's Day this year, she got very excited about the idea of cheesecake which got me excited too! I love making cheesecakes but I haven't made one in a while. They are also one of my favorite desserts! Cheesecake is actually a pretty simple bake but you can't rush your process because you can really mess up the texture from over baking it or over mixing it or end up with massive cracks, from cooling it quickly....

Just crafted an excellent Foxy the French fruit tart with a complimentary traditional tart for a new customer! These tarts are fun and I’m enjoying making animal faces out of fruit!

I was so excited when my brother Kent and his fiancé Evaleigh asked me to make their wedding cake! I had never made anything so complex or grandiose but was looking forward to the challenge! My lovely niece Abigail has a sensitive stomach and can't usually eat cake or frosting, which makes birthday cakes a bit of a challenge. In years past, even with previous ice cream cakes, she usually ends up coming over saying, "Sorry Auntie Ria, but this one hurts my stomach too."
