Perfectly Golden Apple Pancakes

1 c Flour
1 c Graham Flour (sub wheat or white)
3 T Sugar
2 T Baking Powder
1.5 t Baking Soda
1 t salt

In a large bowl, add ingredients then whisk together until fully combined

2 Eggs
2 c Buttermilk
1 c Yogurt
ΒΌ c Vanilla Coffee Creamer
1 T Vanilla

Whisk together in a separate bowl

3 Apples, Fuji or Red Delicious work well. Peel, core and rough chop evenly sized ½” cubes

With scraping spatula, mix apples into flour and coat evenly
Then add liquid, scraping out all of it from the bowl.

Mix gently, lumps are okay, make sure it’s just barely combined and let sit for 3-5 minutes for the baking powder to activate. It should bubble. You can thin your batter here if you need to.

Drop by ΒΌ c full into preheated oil sprayed pan. Use med low heat, adjusting as necessary so they do not brown too quickly leaving the apples and center batter uncooked. As the pancake bubbles and starts to dry, check doneness on the underside by lifting the edge with a flipping spatula. Flip over and slowly brown the other side.

Cook em low and slow for the perfect golden color

Serve with butter and caramel, honey or maple syrup

New product test:
Pan-less cupcake liners

Pros:
- Ability to bake more than 2 dozen at once
- Doesn’t require a specialty pan
-Sturdy
-Beautiful color/print selection

Cons:
-Cost, $5 for 32 liners
-Bakes very wide at the top resulting in a V shaped cake
-Must fill β…” or cakes will be short and pull away from the liner as they cool
-Liners placed close to each other will mold the cakes into non-circular shapes so you can only place so many on a baking pan before you’ve got squared off or odd shaped cakes

Judgement Passed:
These will get you out of a bind if you don’t have a muffin tin however I will not be buying them again. I’d rather go with a paper Tulip wrap or regular liner. Unless I needed a very sturdy cake support, I see no reason to select this style again. It’s a great idea, without a great result. πŸ˜•

Yesterday’s cupcake commission.

Here is the napkin I was given … the 3 circled colors were my options for icing the cakes. I had 2 flavors, Red Velvet with Cream Cheese Icing and Strawberry with American Buttercream so I picked the burgundy-rust and the ivory-peach shades.

I was given creative license on decorations… in fact she only required a swirl to be happy.

Instead, the week prior I worked on Royal Icing rainbows, hearts and flowers directly from the napkin design. They harden and can simply be placed on each cake.

I also used some gold and rose gold sugars for some bling.

I didn’t love the red velvet recipe I used so if you have a family fave, do ya mind sharing?

The strawberry cake turned out beautifully but that’s because I reduced the purΓ©e to concentrate it’s flavor. I opted to strain out the seeds and used a touch of pink food coloring to bring up the color.
