Life has been fruitful, yet I have been absent. I'm still honing my craft with sourdough, but sweet breads from Mexico have been added to my repertoire of offerings over the past few years.

One of those sweet breads, called Pan de Mu**to, has particularly become a favorite in my community and I will be downtown on November 2nd during the Dia de Los Mu**tos event serving this beautiful bread for you to enjoy with your cafecito or for your altar if you are celebrating loved ones who have passed.

From today's bake! 🍞

Jalapeño Cheddar and my plain sourdough. Going for a simple score on these loaves now to keep it consistent. The muscle memory is there from the good ol days baking 300 kgs of dough a day, but just need to keep baking. 😌

Next bake is next week on Friday (8/11), so message me for any of these loaves. 🙏

Garlic Jalapeño Extra Sharp White Cheddar Sourdough next Friday (8/4) for pickup! 😋 Send me a message to confirm a loaf!

Nothing is pre-made or canned. I spend an afternoon chopping up fresh jalapenos, cubing blocks of Tillamook cheese, and roasting whole heads of garlic with salt and olive oil and using a pestle and mortar to make it into a paste where I end up laminating it into the dough before bulk fermentation.

No commercial yeast is used, just relying on my starter to do all the work for me in the flavor department. All I do is patiently wait for it to do it's thing before it goes in my stone hearth oven.

These loaves will be mostly made with freshly, ground spelt flour that I spend an evening milling and sifting to provide a better nutritional profile than you find in supermarket brands.

While I do still incorporate some bran back into the flour after sifting, I end up with lots of bran flakes that I don't normally use, but willing to sell as well. I have about 5 lbs of bran flakes from this prep, so let me know if you'd like some!

$10 each loaf.

Spent the day tweaking a recipe for my Roasted Garlic Extra Sharp White Cheddar Sourdough 🍞. I'll be doing more Specials, but this weekend I'll offer this one up again. Thank you to everyone who continues to enjoy a slow food like my sourdough 🙏. I'm still thinking about selling at the Farmer's Market this year, but will definitely post here and through the Marketplace if that plays out.

Multigrain and sourdough crumb from some of my previous Sunday bakes. 😁 I've been loving the new stonemill and the flour its been helping me to produce. The dough is a dream to work with!

I'll be taking this weekend off and resume the following Sunday. Until then, enjoy your Halloween 🎃 and I hope y'all celebrate Dia de Los Mu**tos by baking some Pan de Los Mu**tos. 💀
