Made English muffins for the first time!

And honestly… they came out SO fluffy, soft, and delicious! The taste was amazing, but I definitely learned something along the way.

I think I made the mistake of shaping them a little too tightly, which ended up degassing the dough — and that meant I lost some of those beautiful nooks and crannies English muffins are known for.

But that’s the fun part of baking… you learn, you adjust, and you try again!

So this is attempt #1, and I’m already excited for #2. Next time, I’m going to be much gentler with the dough and hopefully get those perfect nooks!

I tried making pretzels… and of course, they had to be sourdough.

I’ve never really been a huge pretzel fan, but this one? It hits different. So soft, so fluffy, with just the perfect little touch of sweetness from the maple syrup.

Honestly, I can eat these just as they are—or with butter, cream cheese, or whatever your heart desires.

Safe to say… sourdough pretzels may have just changed my mind about pretzels.

I tried milk bread/brioche for the first time, and I finally gave in because my daughter just doesn’t like my regular sourdough loaf.

But of course… this one is sourdough too.

The recipe called for 3 rolls, but my accounting brain needed everything to balance, so naturally I cut it into 4 equal rolls.

And honestly? I can’t remember the last time I smelled a fresh brioche bread like this. The smell alone had me counting down until breakfast!

I waited the whole day to finally eat it because the only French toast I truly love is the one my hubby makes. ❤️

And let me tell you… it was AMAZING. Fluffy, soft, rich, and absolutely swimming in maple syrup.

Safe to say, I think my daughter may have finally won me over to the brioche side.

I experimented with something a little different: making a sourdough loaf using regular all-purpose flour instead of bread flour.

Here’s what I noticed:

A crispier outer crust
A tighter crumb with smaller holes
And honestly? It tasted more like a classic homemade white bread than the sourdough loaves I’m used to!

It’s amazing how changing just one ingredient can completely change the texture and character of a loaf. Same sourdough process… totally different result!

One thing I’ve learned on my sourdough journey.

A healthy, active starter will often come alive when you mix it with the liquid for your dough. If you start seeing little bubbles forming, that’s a great sign of active fermentation! 🫧

Those bubbles are carbon dioxide being produced by the wild yeast and beneficial bacteria in your starter—the same little gas pockets that will eventually help give your bread that beautiful, airy texture.

Of course, bubbles in the mixing bowl aren’t the only sign of a healthy starter. I also look for a starter that reliably rises after feeding, smells pleasantly tangy or ye**ty, and has lots of bubbles throughout.

Sourdough is all about learning to read your dough, and I’m still learning something new every bake!

Never made biscuits in my entire life… so of course, I had to make them with sourdough

And instead of butter, I used ghee! I did a lot of research on alternatives, but I learned that ghee is still high in saturated fat—something I’m trying to limit.

If you all don’t know, my husband is currently on his journey with cancer, and while he is not yet cancer-free, it has made me much more intentional about the ingredients I use and what goes into my family’s food.

I’m still learning and researching every day, but one thing I do know is that I want to be more mindful of what I’m feeding my family and choose cleaner ingredients whenever I can. At the end of the day, at least I know exactly what’s going into our food.

Safe to say, I’m pretty proud of how my first-ever batch turned out!!

I think my rehydrated starter just changed the game.

I baked this blueberry lemon loaf with my rehydrated starter, and honestly… it came out softer, fluffier, and more tender than when I made it with my original starter.

Same recipe. Different starter. And look at that crumb!

Sometimes giving your starter a little time to come back stronger is all it needs.

THE SECRET TO BETTER CHEESE SOURDOUGH

I don’t use just one kind of cheese—I use both cubes AND shredded cheese.

Why?

Cheese cubes → melt into little pockets of cheesy goodness throughout the loaf.

Shredded cheese → melts more evenly, giving every bite that delicious cheesy flavor.

So you get gooey cheese pockets + cheesy flavor in every bite. 🤤

Because when it comes to cheese sourdough…
more cheese in more ways = better bread.
