You may have noticed that my offerings have been less over the last month. Due to recovering from a major injury, I have not been able to keep up with all my baking and salad making. I want you to know that I still have my delicious baked oatmeal and a limited assortment of other offerings available at Lemon Street Market. Good morning from Abundant Earth Kitchen. The to-go fridge at Lemon Street Market is filled with delicious salads for your lunch on these hot summer days. Today I stocked it with Mexican Quinoa Salad - quinoa blended with pinto beans, salsa, jalapena pepper, and onions. All salads are made with organic and/or local ingredients and packaged in biodegradable containers. Also in the fridge, you will find packaged cut watermelon, single serving size to round out your meal.

I am happy to tell you the Abundant Earth Kitchen macaroons are now vegan and gmo free. I switched the sweetener to coconut nectar and these little guys are quite tasty. When the coconut tree is tapped it produces a nutrient rich sap that exudes from the coconut blossoms called coconut nectar. It has a sweet mild flavor and is very low glycemic. Come out to Lemon Street Market's baked goods section to enjoy this special treat! They won't last long...
