My Green Bakers is a home-based bakery business founded with the idea of sharing organic, fresh sourdough bread and high-quality baked goods with our neighbors and friends. Our family kitchen started baking with sourdough in 2022. “Shelley” was gifted to me from a pastry chef and made it through the mail
all the way from Mancos, CO! She has been providing us with delicious and satisfying bread and goodies, and has become a part of our daily life. We are excited to share our favorite recipes that we have grown to love. We have not purchased sandwich bread from the store since! Sourdough contains a symbiotic colony of lactic acid bacteria (LAB) and wild yeasts that ferment flour and water to make bread. The yeast produces carbon dioxide, which makes the dough rise, while the bacteria produce lactic and acetic acids that give sourdough its distinctive sour flavor, improve its shelf life, and break down sugars for the yeast. Long fermentation in sourdough does break down gluten, making the bread easier to digest. The lactic acid bacteria and wild yeasts in a sourdough starter work over time to break down the gluten proteins. When baking bread, there are only a few ingredients needed. Why not make the best choice possible? Organic flour, Mediterranean sea salt, Filtered water, and organic olive oil are the options we select for our bread. With the amount of environmental toxins that are regularly bombarding us, we choose clean when we have control. What does sustainably and thoughtfully sourced mean to you? We read labels. We compare ingredients and source from trusted companies. We like to pronounce all of the ingredients in our recipes. Will these items last as long? No, but good luck keeping them on the counter anyway! Should you find yourself with some extra goodies, go ahead and freeze them. They will be just as yummy when you revisit them again.
