Cookie Con 2026: let's talk some classes! CookieCon offers a wide array of classes from beginner to expert level, with some of the most amazing instructors and leaders in the industry! These classes usually range from 4 hours to 8 hours long and the learnings are innumerable! Technique, lessons in humility (yes, thank you Madison for reminding me I don't have to be perfect!), aesthetic, encouragement, asking for help, working as a team, pivoting, and all those little in between moments.
So, here are some of the classes I took and the resulting cookies.
The Sweet Designs Shoppe : Parisian Flower Market
Not gonna lie. This class was fast, and tough but I learned so much! Hello......I DID FLORALS!!??? These have terrified me so much but I did them! And...as a testament to how awesome this community is, when I started to fall behind, the wonderful woman next to me starting piping the details she knew I already knew how to do, so that I could focus on learning and practicing the new techniques. No I did not finish this set completely, nor did I get great pictures.....but I did these!!!! (I wish I would have taken pics during class but I was so focused on keeping up! I am a slow decorator!)
Busy B Bakehouse : Tipless Beach Party
This class was also a challenge but is it really learning if you're not being challenged???? This set definitely frustrated the perfectionist in me and my "asking for help is a weakness" mentality. But when things started going south, I took a minute, and pivoted. Then when I was really upset with how my shell was coming out, Madison came over, told me to stop, explained to my why it wasnt working and what I could do to fix it without ruining the cookie. She was so patient and encouraging and reminded me that sea shells in nature aren't perfect!!! And you know what? She's right AND I learned other techniques in the process! Now I have an idea on how to make "inflatable" looking cookies. These aren't quite done yet as I still have some blending to do and shadowing to add, but as I step back and look, I again say "I did that!!!!"
Personally Yours By Steph : Script and Sugar: The Cookie Lettering Lab
One of my bains! I love the look of writing, and big puffy letters at that! But I'm not great at it. Well, Steph was a fabulous instructor giving us guidance, tips, and humidity tricks! She was an open book and with her "ask me anything" attitude," she helped me troubleshoot other areas I have found ahem challenging! Another cheerleader for our collective successes!
Twisted Sweets Bake Shop : Wet on Wet: Don't Fret
This class went over the basics of the wet on wet technique, which I already know and use, but I wanted some tips on how to combat spillover but still completely cover your cookie in a good layer of flood, and get good definition for the design. This class covered all of that and reminded us that if you run hot...AND live in a humid place (hellllloooo FL!) then you're going to want to approach your icing differently as a "one recipe fits all" approach doesn't always work! Tweak, test, play, repeat!!
