A nice review of our macadamia nuts:

I was born in Miami, raised in Sebring (Lorida, actually). Lived in Polk City a couple years. Spent 6 years in Hawaii, lived on 4 of those islands. Now live on a canal in Hudson Beach! Surprised to find you growing mac nuts in Lake Alfred! I ordered a lb. a while back, yours as good or better than the ones grown on Maui or the big island!

Thanks, Ron.

I've been working on a new flavor of macadamia cookie. The first batch turned out really nice. They are English Toffee. They have English Toffee bits added to them instead of white chips or milk chocolate chips. Although the cookies have a nice chew to them, the English Toffee bits add an unexpected crunch to the mouth feel.

I'll have to get some feedback on them to make sure I'm not being biased.

I'm sure some of you are wondering why I'm posting images of bacon here. It's to demonstrate the uses of macadamia trees. Not only are the nuts fabulous, the husks can be composted and used as soil amendments under the trees or mixed with soil mixtures for container plants, the wood can be cut or chipped and used for compost or for smoking meats and cheeses, and the shells make a remarkable aggregate for sand/dirt driveways, smoking meats and cheeses and for making biochar.

This is dry-brined pork belly, i.e., no curing salts. All that was used is kosher salt, fresh cracked black pepper and paprika. It was dry-brined under a vacuum for 10 days, then smoked at low temperatures using crushed macadamia nut shells.

This picture is from a few years ago, but it shows the effectiveness of Tree T-pees. At a 27.7˚ outside temperature, inside the T-pee it was 63.3˚. Most importantly it helps save the trunk of the tree, but it also creates a column of warm air that rises up through the tree. I generally use them on any tree with a 4" or smaller caliper. I had already put a lot of them out a few weeks ago, but in the past few days I put them out on every tree they would fit around.

This morning my results were similar, but not quite as good because of the high winds. At 25.2˚ outside the inside of the T-pees was 41.4˚. With as much wind as we had I don't think the protection will be as good, but anything helps.
