Ok y'all, can we talk about my very first ever pound cake?!? I saw a reel with a girl making a sweet potato pound cake & I thought, ok, I'm gonna do that. Listen, don't ever think you can trust one of those to tell you the right way to bake something. 😂 I had to call in the pound cake expert, Tevin Hill from Oh Sweet Sweet Delights to knock some sense into me. The first red flag was "2 large sweet potatoes." OK, but how many grams is that?? Cuz baby, my idea of large & someone else's is insanely different. 😂 The second red flag was "3 eggs" & you know damn well pound cakes basically always have about 6 eggs in them. When I tell you I didn't think there was any saving my catastrophic experiment, but I wasn't about to start over after I already spent 90 min waiting on these "large" sweet potatoes to bake. I pressed on. Just in the kitchen with hopes, vibes & Tevin's annoyance that I would follow a recipe from a fb reel. 😂🙄🫣
In the end, my severely over filled pan & over sweet potatoed batter baked up to perfection... maybe, I think?? What do I know, I've never made or had q sweet potato pound cake... but y'all, just pray for me cuz every single time I go in that kitchen, I have no plan, no clue & 9 times out of 10, no recipe, just a half baked idea in my head.
