What an anniversary announcement! Four years ago today, I posted my first menu to Instagram and Facebook, announcing that Cady's Cooking was open for business and taking my first orders. Today, I'm announcing that the menu is going to be going through some major changes!

This year, Texas updated the laws for cottage food, or home bakers, and now after registering with the Department of State Health Services, we can legally offer foods that require temperature control - aka foods that need to be kept cold. This means we can now sell things like cheesecake!

My license is approved and active, meaning gluten-free cheesecake and other goodies will be available starting today. As always, everything is made-to-order so please send me a DM or e-mail to let me know how I can make your next celebration a little sweeter.

A lovely bake as we get back into sunny weather - a batch of lemon rolls with lemon glaze and a loaf of banana bread. The rolls pack a juicy, bright punch of lemon from a spread made of butter, sugar, lemon juice and crystalized lemon. It's a more subtle look than cinnamon rolls, but just as tasty! The banana bread smelled wonderful and would make a great snack or breakfast.

Another victory that's almost ready to add to the menu! This weekend I attempted ladyfingers for the first time. I absolutely love the Schar brand ones but as a baker and someone who wants to cut down on packaging waste, I decided to try making them myself and think they came out really well for a first try. I'll have to practice a bit more for consistency in size and shape, but I'm very proud so far. I did buy a silicone mold for this shape a while back but it's decided to take a walk and I couldn't find it, so I piped these freehand instead, which is the more traditional way anyway.

Happy !

Hard to believe I've had this disease for more than half my life. I won't lie and say it's been easy, but it was made much easier than most people have it because my family was already aware of the symptoms and had experience with gluten-free since before I had any issues. I grew up with gluten-free options being a normal thing in the household and as much as I wish for a cure, I'm so glad that the newly diagnosed have even more options than we did back then.

It's been a hot minute since I baked even for myself. Been a very busy year in our household! I finally got the chance to turn up the oven again this past weekend and made a simple, comforting snack - orange cranberry muffins. Not super exciting, but delicious and perfectly baked.

I was playing around and testing out a new kitchen gadget recently - a mini pizelle maker!

If you're like me and have never had a pizelle before, imagine a waffle cookie hybrid. It's thin and crunchy but gets cooked in a press like waffles and has a thick batter that's more like pancakes and waffles than cookie dough. They're traditionally made with anise flavor, which has a similar taste to licorice, but I just made my first batch with vanilla. I can't wait to make more and try all sorts of flavors!

These pizelle are one of my favorite things I've made in the kitchen this year! I'm definitely adding these to the menu!

What a wonderful coincidence! The theme for the final week in the baking challenge was cake and I was feeling a little anxious about baking a whole cake with no one to share it with, when I got an e-mail ordering a dozen cupcakes for Easter today. Thank you so much for letting me be part of your family's celebration and for unknowingly fitting into the challenge :)

I was given freedom to decorate the cupcakes so I did a few silly Easter themed ideas, including bunny tails poking out of the grass and Easter eggs, plus a few more serious ribbon designs in a few colors that I associate with the holiday. I think they came out super cute!

For week 3 of the baking challenge, the theme was bread/pastries. I decided to take a healthier spin on it since the last two challenges were heavy on the butter and chocolate, so I made some sweet potato muffins!

I'm pretty sure I've posted these delicious muffins before, but for new followers, here are the details. This recipe uses the base from the zucchini bread recipe my grandma gave me from a Celiac Sprue Association cookbook that's nearly as old as I am. It's rice flour, oil, sugar, and originally shredded zucchini. I decided to tinker with the recipe and made it a bit healthier plus found that it works with several kinds of veggies, my favorite of which is sweet potato. I steam the potatoes until fork tender then put them through a ricer to get a nice, consistent mash. Mix that in to the bread base and make in a muffin tin!

For the baking challenge week 2, the theme was "kid friendly" and my mind instantly jumped to something I made and failed at previously - millionaire's shortbread. It's kind of like a Twix but with a softer cookie base.

Shortbread cookie, topped with a light, buttery caramel, then topped with chocolate. Much better than my previous attempt, even if the caramel is a touch lighter than I wanted. I tried two different chocolate tops to see what the difference was and overall not much!

Much happier with these this time around.
