I’ve been really busy since last posted on FB... quit using this page bc it wasn’t cross-posting from IG, so all of these (plus lots of fun/informative/scary behind-the-scenes stories) have happened in the last few months over on Instagram. Y’all can come find me over there for more information....I don’t trust FB to deliver messages anymore either, but my cake schedule is pretty full anyway. Not taking any orders at the moment since I’m full through June, and with mike abt to find a new job after finishing school (tomorrow. He’s literally finishing TOMORROW!) we don’t really know what the future holds in terms of moving/kitchen space/deadlines/vacation (yeah right), so just don’t want to make any promises I may not be able to keep. What a time to be alive šŸ™‚ Hope y’all are doing great, good luck in all your endeavors, I’ll check back in here in, like, August... maybe šŸ˜‰

Hazelnut Coffee Milk Cake
-hot milk cake
-espresso malt soak
-mascarpone custard
-hazelnut praline paste
-coffee custard buttercream
-roasted coffee&cocoa grounds adapted from using Girl Blend (thanks 😸)
-candied hazelnuts

Hoorayhooray! She liked the cake!! I can’t repeat my friend ā€˜s exact words bc this is a family show.....just kidding. She said ā€œholy shirt balls this cake is AMAZING!ā€ šŸ˜†šŸ„³šŸ™Œ

I was reminded this past week of The (1 & Only) Very Bad thing I used to do as a kid: run home faster than anyone when we were all out for a walk and sneak spoonfuls of confectioners sugar from the pantry, as many as I dared. Mom didn’t bake often enough to miss a little confectioners and there were no candy wrappers to leave a trail of evidence. It was the perfect crime, as long as I remembered to wipe my face šŸ˜³šŸ‘ŒšŸ˜¬
So, I have a big sweet tooth and designing a cake for someone who isn’t big on sweets seemed like a challenge... but as soon as I realized there should be a coffee element involved, it all came together pretty quickly.

Learned a bunch of new things, let’s see:
-hot milk cake is the best cake ever. Tastes like a pound cake, but w/ more porous crumb so absorbs soaks beautifully w/out turning ā€œgummyā€
-any nut brittle is easy to make, and pretty versatile since it can be converted into powder or paste form. There’s a slight bitterness at the backend of hazelnut praline to balance out the sugar, and it’s just gorgeous.
-mascarpone custard is the stuff usually found in tiramisu, but really it should be everywhere. Everywhere, I tell you. Perfect cake filling for Non Spoonfuls-of-Sugar Eaters...or adults 😬

In other news: I’ve decided to take a hiatus from baking orders between Thanksgiving and Christmas. There’s simply much personal holiday stuff that needs to happen; taking on any extra baking would be unwise. And y’all know me, I’m nothing if not wise šŸ˜‰šŸ˜‚šŸ™„ There’s still a lot to do BEFORE thanksgiving, so the show ain’t over yet, but just be forewarned 😚 love y’all, wear a mask āœŒļøšŸ˜»

3 days ago I made a cake that accidentally matched the RBG votive candle M gifted me last year. I honestly hadn’t realized how matchy-matchy they were until I was taking final pictures, so took a few of them together.... which then led to us building an impromptu mini shrine to her. When we were done it felt sac religious to take a picture somehow, even though I’m not religious and didn’t pray... but I do remember thinking ā€œman, I hope she’s okay right nowā€. What’s pictured in this post is the second time- I guess it would be a memorial by then- made last night a few minutes after learning the news of her passing.

That candle has been on our kitchen counter for over a year, but has only actually been lit a handful of times, the last one being in March... and we’ve definitely never built a shrine before, to anyone. The timing of all this feels, well, supernatural, to be honest. I’m not only non-religious, I’m also not much of a believer in the supernatural (but aliens absolutely do exist—it’s only logical).... but it’s just weird... right? 😳🤭🤯

The point is: I’m so grateful for her life, and the immeasurable ways she improved the lives of women in our country... she’s the example of how ripple effects of one great woman can reach millions. I’m so grateful to have been aware and in awe of her during her lifetime, and look forward to telling the story of RBG to my own daughter someday... and now that story will also include the night mike & I must’ve had a subconscious premonition ā¤ļøā¤ļø

Played around with chocolate and gold dust for the first time yesterday. Learned a lot, as usual 😬 1: this is spread too thin—it’ll start melting the second you touch it after setting, and there will be fingerprints šŸ˜³šŸ¤¦šŸ»ā€ā™€ļø 2: if I accidentally sigh while looking closely the dust goes EVERYWHERE... and it looks pretty cool!! šŸ„³šŸ¤·šŸ»ā€ā™€ļø 3: the light through my kitchen window changes SO quickly... but I already knew that one. 4: if I decide against the texture it will smooth out easily by just lifting up the paper while chocolate is still wet... but maybe that’s not true once the layer is actually as thick as it’s supposed to be šŸ¤” guess I have more playing— I mean, experimenting— to do!

Whoopie Filling Test
A friend went to Maine a few months ago and ate her first Whoopie pie ever. Now it’s her birthday month and she’s requested a cake with Whoopie pie filling. I’d never made one, or even known exactly what that special filling was, so this is the testing stage after a lot of research. I started by reading and reading countless blogs and recipes—then calling the bakery where my girl fell in love w/ Whoopie Pies— and I’ve learned a few things: The Amish did it first, but their filling recipe is so far away from the ā€œclassicā€ Maine recipe that I can confidently say this is quintessentially Maine thing (šŸ™ŒšŸ˜¬). The rest of PA calls these babies ā€œgobsā€ so they’re automatically disqualified from ownership 🤢. A LOT of people think they have improved on the Classic recipe, but those folks are just scared of eating shortening which really provides a unique texture that cannot be replicated by butter. It’s just not the same. Many of those same people also think that homemade marshmallow cream is superior... but as a New Englander who grew up eating Fluffernutters I can appreciate the awesomeness (and I mean that literally, like it fills one w/ ā€œaweā€, not just that it’s really great) that is a big jar of Fluff. So that’s what was used in all three of these filling combinations.

Hi FB Cake people! These are all the cakes I’ve posted on IG that haven’t cross posted bc...well I don’t know why. I’ve tried everything (including ā€œturn it off turn it back onā€ ie disconnecting & making a new password bc of course I had forgotten it šŸ˜³šŸ¤¦šŸ»ā€ā™€ļø)
Anyway... I’ve been thinking about deactivating my FB accounts for a while but haven’t pulled the trigger bc I was holding out hope this page would magically start working again... that is, uh, not happening... so I’m gonna go ahead and cut my losses on this page and focus all the business-y energy on the Instagram account () There’s so much more stuff there! I actually keep up w/ my story w/ behind-the-scenes things, baking tips, and allllllll the cakes (including failures)... it’s wicked fun 😁🄳
I’ll leave this up for a few days before deactivating so anyone w/out an IG account can message me here to get some additional contact info in case you want a cake in the future... but then, yeah, I’ll be done w/ the Book of Faces for a while.

This year’s birthday cake...
Mike is a cheesecake fiend. Luckily, I found the PERFECT cheesecake filling recipe a few months ago....6-inch so no math for me to screw up, simultaneously dense and light, cream-cheesy but not overpoweringly so... it’s our favorite. Hands down. Big shoutout to for posting copy-cat. Damn, it’s so good 😻
Anyway, so since I had the perfect filling didn’t want to overcomplicate it like last year when I went HAM making a sandwich cake. Only a few changes to recipe; since M prefers a softer crust I just made it w/ 3/4s Nilla wafers and 1/4 Biscoff cookies, then threw it in the freezer while whipping up the filling. Never done that before, but it was a risk that paid off šŸ™Œ
Knew I wanted to add strawberries but it didn’t look complete until I found a strawberry glaze to top it off ( ). Then it came together quite nicely 😊
Only downside—and really it’s a blessing to have happened on a cake for us instead of one to sell— found out that when I dropped my 6-in springform a few weeks ago I actually dented it so a tiny bit of bain-marie water seeped in and gave me a 2-in section of outer edge soggy crust (even through 3 layers of foil). On a 6-in cake that’s a lot, so I’ll be ordering a new baby springform shortly. Other than that though, this cake killed šŸ’—šŸ„³šŸ¤˜
Of course no celebration of Mike would be complete w/out pizza, ftw šŸ‘šŸ‘ Their take-out pies are SO MUCH BIGGER than I remembered (Ham is for scale 😹) so it took 3 glorious days to finish!

Second Cake Emergency! Something very exciting happened last week, y’all. A Knoxville resident that I don’t know and you don’t know (I checked) apparently typed ā€œchocolate cake Knoxvilleā€ into FB and got sent to a PCC post! Maybe I’m dumb for thinking this is super cool- like, my little business showing up in a search makes it more legit- but nonetheless I’m pleasantly surprised 😬 So my NEW friend needed a birthday cake, liked the look of the chocolate/blackberry I made while quarantined a few weeks ago, and I had a single day to do it (caught me at just the right time, in the right mood, usually that’ll get you a sincere apology bc it won’t be possible)... she asked for super simple decoration, but I was free to make the changes that’d come to mind when I tasted the first go at this.
Valrhona Cocoa Cake, Blackberry Syrup Soak, Reduced Blackberry sauce/almost jam but not quite, BlackBerry Mascarpone (only flavored w/ reduce blackberry juices this time, so no seeds), Fresh Blackberries between layers (also new—needed some oomph w/out overwhelming seeds), and a Chocolate Swiss Meringue Buttercream (equal parts Cocoa & Ganache for more complex flavor w/out ruining texture). Maybe I should’ve let the SMBC run w/ a paddle longer to get all the bubbles out— apparently 7ish minutes isn’t enough— but this stuff tasted amazing. Also it looks like clay but feels like air, so that’s pretty cool šŸ˜Ž
And that’s it! That’s all I have to say about this cake. Last time I wrote a novella in the captions so I’ll keep this one short. Oh! But I should say: there were cake domes left over and JUST enough of everything (except mascarpone— all of that went on the real cake) to make a little baby demo for me & Mike at the end. He Freaked. Out. This is definitely a keeper. First one was really good— this one was even better šŸ˜†šŸ™ŒšŸ˜¬šŸ„³

I’ve had a very busy week! Personally and professionally, just going non-stop. It all started with this emergency cake for an old friend...I had 2 days notice to whip up something ā€œvegan, chocolate, fruityā€. Luckily I have the perfect vegan chocolate cake under my belt (except when I forget the sugar which has happened twice now šŸ™€šŸ¤¦šŸ»ā€ā™€ļø) AND the best sour cherry cake filling around (I say that w/ confidence while having tried exactly zero others šŸ˜‰šŸ¤£)
The Accidentally Vegan Hershey’s Chocolate Cake recipe- subbed Valrhona Cocoa. Sour Cherry:Bing :: 4oz:3oz (if that’s not how one writes those things don’t yell at me—the ACT was 16 yrs ago and this way makes sense in my head šŸ˜‚šŸ¤“) Vegan Semi-Sweet Ganache dams & crumb coat, Vegan Chocolate Buttercream w/ Valrhona Cocoa (used every single bit of both frostings—literally scraped the bowls clean— so next time make x1.5 batch), and some toasted almonds to compliment the almond extract in cherry filling.
Since I cannot tell a lie: the decoration was born out of necessity when my ganache chilled too quickly during first layer and resulted in a lumpy cake 😳 Thankfully this layered ruffles technique was in the back of my brain somewhere, and I decided to risk a brand new-to-me thing at the 11th hour! Had to keep throwing it in the freezer every other layer since the warmth of my hand was melting the frosting as I applied it šŸ™€But eventually I got to the top and personally I think it paid off nicely; really love how the rounded ruffles mirror the almond shape, AND you wouldn’t even know the undercoat of this baby looked like it had frost heaves šŸ˜†šŸ™ŒšŸ™„šŸ„³
My dear old friend who ate this cake used an adjective I hadn’t heard in years and will be worth trying to incorporate into my everyday vocabulary now... ā€œphenomenalā€! That’s a good word ā˜ŗļø I’m always so delighted to make other people happy w/ my desserts...but when it sparks words like that, well, that’s EVEN better šŸ™ŒšŸ˜
