Our little monster turns one tomorrow and we celebrated him this past weekend. I had a blast making this cake that I knew would soon be smashed! (Swipe to see the sweet boy!)

The day was so so sweet because my little man is one but also so very hard because I didn’t have my mom, my best friend and my caregiver there physically beside me.

But guess what…

God showed up and showed out yet again! I know that my mom was so so present. It was a beautiful day outside and we had an amazing time with family and friends.

After all was done and I was leaving I heard my name. I turned around to see no one. I was the only one there. It was my mom’s voice but no one was there. Thank you Lord for that sweet blessing of hearing her and feeling her presence in that moment! 🦋

I made this sweet throw back bunny cake this weekend for a bestie of mine! 🤍

My mom always loved this cake and loved my dad making it every Easter. This brought back such good memories on a day when the emotions hit me like a wave and drowned me out of nowhere.

Today was one of those didn’t think I would cry but here we are kind of days. A rush of emotions came over me this weekend.

As I sat in Easter service (crying yet again) I felt so present with God and my mom. Our pastor preached such a beautiful sermon and towards the end he said, “worshiping the lord here on earth connects you with your heavenly family who are already worshiping from eternity past to eternity future. You are connected and as close as you can get to them in the presence.” At this moment as I stood with my brother on my right and my husband on my left I began to weep more. I immediately pictured my mom standing with us, holding our hands, worshiping the almighty who paid the ultimate price so that we will have eternal life and that one day we will meet him and be reunited with my mom.

Today needed a pop of color!

Some days are harder than others. Everyday is hard but some just hit you like a ton of bricks. Today was that day. So you know what I did?? I made my own rainbow with some sugar, butter, flour and love.

Hey everyone! I wanted to take a moment to reintroduce myself. My name is Nichole. I have loved baking my whole life. I recently had a massive life change and needed to rebrand. NiNi’s Cupcakes is evolving into Carol Ann’s Bakery. A little back story...

In January of this year, my angel of a mom passed away from an almost two year battle with lung cancer. My mom was loving, caring, kind, compassionate, direct, and so so strong. She brought a light to all around her and no one could ever imagine any hurt or pain she was going through because she never showed it and always cared more about others and how they were doing. She continually amazed me as she walked through this hard fought journey with so much grace.
As I bake through the overwhelming grief, I am bringing all of you along. Carolyn is my first name and my husband calls me Carol because he thinks its funny and it just stuck. My moms middle name was Ann and I love it and her so dearly. Then comes Carol Ann.

This journey is a little bit of me and a whole lot of mom through me, so come along my journey, cry with me, pray with me, laugh with me, bake with me, and eat our feelings together.

The righteous cry out, and the Lord hears them; he delivers them from all their troubles. The Lord is close to the broken-hearted and saves those who are crushed in spirit
