Tortilla
Soft flatbread popular in Mexican cuisine.
Ingredients
* 2 cups all-purpose flour or corn flour
* ½ tsp salt
* 3 tbsp oil or butter
* ¾ cup warm water
Method
1. Mix flour and salt.
2. Add oil and warm water.
3. Knead into smooth dough.
4. Rest 20 minutes.
5. Divide and roll into thin circles.
6. Cook on hot skillet until light brown spots appear.

* Quesadillas
* Burritos
Arepa
Cornmeal flatbread from Venezuela and Colombia.
Ingredients
* 2 cups pre-cooked cornmeal
* 2½ cups warm water
* 1 tsp salt
* 1 tbsp butter or oil
Method
1. Mix warm water, salt, and butter.
2. Add cornmeal gradually.
3. Mix into soft dough.
4. Rest 5 minutes.
5. Shape into thick discs.
6. Cook on skillet until golden on both sides.
7. Finish in oven if needed.

Gordita
Thick Mexican stuffed flatbread.
Ingredients
* 2 cups masa harina or flour
* 1 tsp salt
* 1½ cups warm water
* Oil for cooking
Method
1. Mix flour and salt.
2. Add warm water gradually.
3. Knead soft dough.
4. Shape into thick flat discs.
5. Cook on hot skillet until puffed and cooked.
6. Slice open and fill as desired.
