Pumpkin Magic Cake - a treat that Zia bakes once a year, during Autumn 🍂 What makes it magic? 👉 In a cake pan: add cake mix (after many attempts with gluten-free and my own cake mix, I found a basic wheat flour pre-mix box is best 🤷‍♀️), then add pumpkin pie mix (pumpkin purée, evaporated oat milk, plant whipping cream, Just Egg, pumpkin pie spice, brown sugar). Bake at 350, and it literally took my cake to be fully cooked after 1hr30min. Let it cool completely for an hour or so, then place a dish on top of cake pan and flip over to take out. ***Magically*** the pumpkin pie mix is at the top while the cake is at the bottom, even though the cake mix was in the pan first!! 🎃
