Cakes don’t have to be copycat. They don’t have to be boring. They can truly be as special and as unique as you are. Because who wants a cake that’s been done a million times, when you could have a cake that’s never been created? A cake that is unique to you in every way. A cake that is as special as the moment it’s celebrating. A cake that is more than just a last minute thought. A cake that tastes as good as it looks. ⁣

Listen. Chocolate cake is my families favorite. It is one of my clients favorites. Some have even said it’s the best they’ve ever had. I tend to agree. ⁣
⁣
There are many things I do to get that amazing deep chocolate flavor. Not that “came from a box flavor that falls flat.”⁣
⁣
But one thing I do that makes a difference is blooming the chocolate in hot coffee first. Do not. I repeat do not add your cocoa powder into the dry ingredients. Measure your cocoa powder into a cup or bowl, then pour that hot coffee & mix. It will form a thick paste and you will add that last into your mix. This simple step smooths out any bitterness, deepens the chocolate flavor, and releases dormant flavor & aroma compounds. ⁣
⁣
If your recipe doesn’t use a hot liquid component(coffee or water)…please stop using the recipe. ⁣I beg of you. It’s no better than a box cake at that point.

So many people have enjoyed my tasting boxes & found flavors they wouldn’t get anywhere else. I take pride in each flavor being handcrafted from scratch. ⁣
