What Happens When the Bakery Is “Closed”? 🤔🥨🍞

One of the questions we get asked most often is, “What do you do on the days you’re closed?”

Well… this. 👇

While the storefront lights may be off, the bakery is very much alive behind the scenes.

Today’s production included hand-stretching and preparing a portion of the flatbreads headed to my friends at Hoyahophousebrewing in Waupun. Every flatbread is stretched by hand and baked from scratch—no shortcuts here!

And those dough bins? That’s just a portion of what Doughlores helped create today. 💛 Our hardworking starter spent the day turning flour, water, and time into the foundation for this week’s bakes.

From these bins alone, we’ll be making:
🥨 50 soft pretzels
🍞 100+ loaves of sourdough bread
🫓 100 more handcrafted flatbreads

Sourdough is a slow process, and much of the work happens long before the ovens are turned on. Mixing, fermenting, shaping, stretching, and prepping all happen behind the scenes so our shelves can be stocked when we open our doors.

So while we’re “closed,” we’re really just getting ready for another delicious week at Lilla + Rose. ❤️
