Mini blueberry lemon sourdough loaves are just so perfect for spring πŸ«πŸ‹πŸž I made 25 of these little cuties last weekend and couldn’t stop watching as they were baking up 🀩! Should we bring them back for the next pop up on May 30th?!

I have such a full range of emotions leading up to a pop up. First comes the nerves before I send the pre-order link out: will anyone actually order? Then comes the excitement when orders start rolling in. After that, it’s focused planning mode: packaging, ingredients, dough schedules, and somehow fitting it all around work and family life.

Then after about 8 or 9 hours of baking, I start questioning all my life choices and feel like I’ll never finish packaging everything in time.

But then pop up day arrives and I get to see so many wonderful regulars picking up something special for themselves or their families, and meeting new faces discovering my baked goods for the first time. In that moment, it all becomes 1000x worth it and I start planning when I can do it all over again.

Welcome to Baked by Jess HQ! πŸžπŸ’•

What started as our front living room is now the baking space of my dreams.

Last summer when I bought my bread oven, I was still hand mixing dough and working mostly from my kitchen counter and using a folding table next to the oven. I knew that if I wanted to keep baking at the pace I was growing, I would eventually need a proper space, but I had no idea how to bring the vision in my head to life.

After hearing so many great things from friends, I reached out to Camellia at and hoped she could help me make it happen.

My biggest goals were for this space to function as an in home bakery while still feeling warm and connected to the rest of our home. I also wanted enough room to host small workshops, tastings, and creative gatherings down the road (hello butter party!! 🧈).

This space truly feels like a dream come true, and I’m so grateful to Camellia and the team at .studio for bringing it to life.

And to every single friend and customer who has supported Baked by Jess, you helped me build this too.

Feeling so inspired and excited to see where it all goes next πŸ₯°

Enjoying all the cappuccinos, pastries, and bread Europe had to offer this past week left me feeling so inspired to come home and start baking again. I was in awe of the sheer number of cafΓ©s EVERYWHERE! It’s amazing how you’re never more than a few steps away from a delicious little treat πŸ˜‹

But truly, I came home more motivated than ever to bake all the delicious things for our wonderful community. And maybe one day… a Baked by Jess cafΓ© in the heart of Kensington? A girl can dream πŸ’β€β™€οΈπŸ’•

Crossed an item off my baking bucket list last week 🀩

It was such a dream to take a class at with Chef Vi, learning the art of laminating dough to make croissants, pain au chocolat, pain au raisin (which I had never tried before but is now my new favorite), a pistachio & chocolate chip twist, and even a cinnamon sugar croissant muffin made from scraps of dough.

So much time and care goes into these delicate pastries, and I loved learning the history alongside practical tips for making them at home.

Now I’m on the hunt for some good European butter so I can try my hand at recreating them πŸ₯βœ¨
