I have been following some ladies that have been giving me information about our food that we buy. Among the many things is the flour we buy. And while I am no expert, I'd love to pass along what I have discovered.
A while back the flour makers started taking nutrients out of the flours to give it a longer more stable shelf life. This is why we have seen an uptick of gluten intolerance in society.
When you buy wheat or flour berries (and there are multiple options) if you have a mill you can freshly grind your own flour and keep the nutrients making the flour a much healthier option rather than it being something you avoid.
I don't have a mill and I was looking at possibly getting one but they are pricey. Insert my country folk friend who are always rigging something together. They discovered they had an old commercial sized we think coffee grinder like huge. They rigged it up and we tried using it for flour and it worked!
I then was super interested to try the flour and see if it tasted good or if it would even work with my sourdough starter, and as you can see from the bubbles it was very happy with it.
I made some mini bagels with the flour and they turned out fantastic! Even my kids have been gobbling them up! I am going to try and use this going forward!
