Bread Diary entry no.111 made with pandan and coconut milk and ube flavoring. This was my second attempt at bagels, and I think I've got it! My first round of bagels were just plain, and my shaping was all wrong. They turned out tasty but just not anything I'd want to eat twice. Once I gave up trying to make them look like normal bagels and just let myself shape them how my inner child wanted to shape them, bam! They finally came out looking cute! It may be a little early for Mardi gras colors, but I wanted to have something bold and bright to cheer up the spirits during this long stretch of soggy weather. Not sure if these would sell well at market, but they certainly bring a smile to my face.

We're back! After a long, hot summer, we (my wonderful husband, James, and friend, Amanda) will be manning our booth this weekend . We've got Whiskey Cherry, Nacho Night (jalapeño, cheese, and sweet corn), garlic sage, and classic white sourdough loaves.

We've also started taking sign ups for sourdough baking classes for the fall. Please let James and Amanda know if you are interested. Classes are Saturday afternoons and taught in the comfort of your home. Also, also... we've been taking the time off to start experimenting with cookie flavors, and in the coming weeks, we hope to bring these to market.

Speaking of future market dates, we will not be at market the first two weekends of September as we will be moving Ren to New York for her dream job! Bitter sweet Congratulations on her achievement! We couldn't be more proud.

Sometimes we get asked, "which one's your favorite?" And, while I never hesitate to offer up my favorite flavor of the moment, I find it hard to pick my all-time favorite. But, today is different; today, we received a loaf gifted to us by a friend, who also likes to bake.

It came with a handwritten note that said "Pane con Pasta (Bread with Pasta) made with Lievito Madre (ital. Sourdough)". It was simply delicious. But, what I loved most about it was that it was a gift. It was genuine and unpretentious. Only a hand-made gift that took hours of careful tending to make can sit on my cutting board with that much pride.

I have so much more to learn about baking that has nothing to do with flour, salt, or water. But, now I have a great answer to the "which one's your favorite?" question. My favorite bread is the one that comes from those who care.

Bread Diary entry №101:

purple sweet potatoes with maple syrup.

This was done using the split dough method at approximately 80-85% hydration. Scoring was very difficult as the dough was just so wet. 10% Durum 90% Lancelot.

Super tender crumb with a very subtle maple hint.

Sourdough discard English muffins! Don't mind the burnt ones :) they still taste delicious.

As I prepare to go back to my day job - after what I can only describe as a marathon of sleepless nights caring for our newborn - I find myself needing to prepare a bunch of freezer meals.

Though I'm still not sure what day it is or when I last showered, I do know these will make excellent and quick breakfast meals.
