Judith Palmer Capertina has been creating Culinary confections for 43 years. She is now the proud Owner/ Exec Pastry Chef of Haole Girl Island Sweets.,
created in May 2013, A Farm to Table European Style Bakery in Kapaa, Hi. A return to the Island of Kauai in Sept,2012 to work at the St Regis Resort and Spa, Judy was the Executive Pastry Chef at the 5Star Princeville Resort from Sept 1993-April 1995 opening after Hurricane Iniki, transferring to the 5 Star Phoenician Resort in Scottsdale Arizona, where she was Exec Pastry Chef for 7 years with a staff of 26. An Honors Graduate of the Culinary Institute of America, Judy has been the coordinating Pastry Chef at the Cannes Film Festival in France and the Sundance Festival in Utah numerous times over the last 15 years. She has held many key positions in the Industry, such as Chocolatier at the Grand Wailea Resort in Maui,
Executive Pastry Chef at the Inn at Spanish Bay, Pebble Beach, Calif. Earlier in her career, Judy was part of the Opening and working team at the Grand Hyatt NYC, The Four Seasons Dallas and Philadelphia. Judy has bee featured on the Food Network, several TV stations an multiple magazines and publications, including Arizona Brida Magazine, Alaska Bride,
Gourment and Bon Appetit, and Pastry Art and Design. She is a Chapter in the book
"Creating Chefs" and has helped over 40 students with externships from varions Culinary schools nationally
