Rice, chicken, cucumbers, tomatoes, chickpeas, avocado, mango, kalamata olives, feta cheese & homemade tzatziki sauce.

To some people this may just look like dinner…but for our family, it’s also a reminder of how far my son Quintin has come.

Years ago, a bowl with this many textures would have been overwhelming for him. Certain foods could cause gagging, frustration, tears, or him refusing to eat altogether. As his mom, I learned that it wasn’t about him ā€œbeing difficult.ā€ His brain was processing textures, flavors, smells & experiences differently.

So we worked through it together.
Over & over & over again.

Some foods had to be introduced 20+ different ways. Some things were a hard no at first but became favorites later. Sometimes I had to change textures, preparation, or simply keep encouraging him to try one tiny bite. Other times, we just had to pause & try again another day.

Now we’re at the point where I can say:
ā€œI think you’ll like this. Will you try it for me?ā€
…and most of the time, he will 🄹

He still has some texture sensitivities, but the growth has been incredible. Watching him confidently eat meals like this is something most people probably wouldn’t think twice about, but for us it’s a huge win.

I’m proud of him every single day. šŸ’™

Banana Pudding Sweet Rolls šŸŒ

Soft sweet rolls filled with banana cheesecake filling & crushed vanilla wafers, topped with a light banana buttercream frosting, vanilla wafer crumble, a mini vanilla wafer & banana chip.

Happy Mother’s Day to all of the beautiful moms out there šŸ¤

Being a mother has been the greatest blessing and purpose of my life. These 5 are my reason for everything. My reason to keep pushing, keep building, keep growing, and keep going no matter what life throws at us.

My kids have watched me through every chapter — building my baking business from the ground up, working multiple jobs, building our home, long nights, stressful moments, happy moments, and everything in between. They didn’t just watch it all…they helped me through it. We’ve truly grown together.

One thing I’m most proud of is the people they are becoming. They are kind, respectful, caring, loving, thoughtful, and protective of the people they love. We are incredibly close, and I never take that for granted.

Today they spoiled me in the sweetest way with flowers, balloons, a huge card, a cast iron pan set, workout weights I’ve been wanting, a whole basket full of self-care goodies and all my favorite things, and dinner. What got me most wasn’t even the gifts themselves — it was realizing how much they truly pay attention to me. Every single item was something they know I love or have mentioned at some point.

I laughed (& cried a little šŸ˜…) when they told me I’m hard to shop for because I’m ā€œnot materialisticā€ and never ask for anything for myself

But honestly, I already have everything I need.

Getting to be their mom is the greatest gift I could ever ask for šŸ¤

This one is a little bittersweet for me to share…

For the first time since 2019, I won’t be set up at the Fredericktown Azalea Festival this weekend.

If I’m being honest, this wasn’t an easy decision. My heart has been needing this break—but at the same time, hearing from so many of you, your excitement, your kind words, and knowing how much this has become a tradition… it’s made stepping back really hard.

I hope you know that none of that goes unnoticed. It truly means more to me than I can put into words.

Over the years, this has become so much more than just baking. It’s been the conversations, the familiar faces, the love and support that keeps showing up year after year. And I’m incredibly grateful for every bit of it.

Right now, I’m choosing to continue to take the time I need to rest and reset. I’m not sure what the future holds for my baking just yet, but I do know how much I appreciate all of you.

I didn’t want anyone walking the grounds looking for me and wondering where I was, so I wanted to share this ahead of time.

I hope you all have an amazing weekend—I’ll truly miss seeing you šŸ¤šŸŽ¢šŸŽ”

Today the kids and I picked about 50 dandelions right out of our yard and turned them into something special—dandelion fritters for lunch šŸ’›

We paired them with grilled chicken thighs and fresh fruit, and honestly…they were surprisingly delicious. Like, really good. I’ve had my Herbal Handbook for almost 2 years now, and being constantly on the go, I’m just now actually using it—and I’m so glad I did.

There’s something so humbling and grounding about using what God has already provided, right in our own backyard.

🌼 A little about dandelions:
Dandelions (Taraxacum officinale) are part of the
Asteraceae family, which also includes daisies, sunflowers, lettuce, and chicory. They are one of the most nutrient-dense ā€œweedsā€ you’ll find.

They’re rich in:
• Vitamins A, C, and K
• Iron, calcium, and potassium
• Antioxidants that support overall health

🌿 Common uses:
• Leaves can be eaten fresh or cooked (great for digestion)
• Roots are often used for teas and tinctures (liver support)
• Flowers (like we used today!) can be made into fritters, oils, salves, or even jelly

And maybe my favorite part…
✨ Dandelions represent cheerfulness and resilience.
They’re also associated with wish fulfillment—which feels pretty fitting when you’re watching your kids pick them with smiles on their faces.

What a reminder that what we often overlook can actually nourish us—body and soul.

Today was one of those moments that just felt right šŸ¤šŸŒæ

My kids and I went out into the yard and gathered a FULL 3-gallon bucket of purple dead nettle. What most people see as just another ā€œweedā€ is actually one of the first gifts of the season.

We brought it inside, gave it a good rinse, and now I’ve got 4 half sheet pans full laid out on cooling racks, drying on my baker’s rack. Watching it all spread out like that… it really hit me how much abundance is right here in our own yard.

Purple dead nettle is packed with goodness:
šŸ’š Supports the immune system
šŸ¤ Helps with seasonal allergies
šŸ’š Anti-inflammatory
šŸ¤ Rich in vitamins and minerals

And the uses are endless:
🌿 Teas for daily nourishment
🌿 Tinctures for immune and allergy support
🌿 Salves for skin healing
🌿 Added to meals like salads, pestos, or sautéed greens

This is exactly the kind of life I’ve been wanting more of—slowing down, learning what God placed around us, and teaching my kids that we don’t always have to go to the store to be provided for.

For the past 7 days our house — along with about 7,000 others in town — has been without natural gas after last week’s storms damaged a pipeline.

Since our furnace and water heater are gas, that meant no hot water for a week.

Was it inconvenient? Sure. Heating water on the stove for baths and dishes isn’t exactly the easiest way to do things. But it was definitely manageable, and it really made me think about how important it is to be able to adapt when things don’t go as planned.

We heated water on the electric stove for baths, dishes, and whatever else we needed. It wasn’t fancy, but it worked.

Situations like this are a good reminder that preparedness isn’t about panic — it’s about having simple solutions ready so life can keep moving when something unexpected happens.

I also want to give a big thank you to the crews who worked long hours to get everyone restored — especially Ameren, Spire & Summit for coming to help Liberty Utilities. The gentleman who came to turn our gas back on today was incredibly kind, and you could tell these crews have been putting in some serious hours all week to help our community.

We’re very thankful to have our hot water back today.

This past week was also a good reminder that being a little prepared can make situations like this a lot less stressful.

Here are a few easy things that can make a big difference during a gas or power outage:

Simple Preparedness Tips:

• Keep a few gallons of water stored
• Have a way to heat water (stove, camp stove, electric burner, etc.)
• Crockpot, roaster oven, electric skillet, or hot plate for cooking
• Extra blankets or small electric heaters for warmth
• Flashlights and extra batteries
• Battery banks for charging phones
• Candles or lanterns
• A small stock of easy-to-cook foods

Yesterday I had the honor of hosting my cousin’s baby shower in our hometown and it truly turned out to be such a beautiful day.

So many people showed up to help set up, play games, take photos, and most importantly show her love and support as she prepares to welcome her baby boy into the world. Seeing everyone come together like that meant more than words can explain.

I am incredibly proud of the young woman and mother she is becoming. Watching someone step into a new chapter of life with strength and determination is a beautiful thing.

Thank you to everyone who came, helped, and supported her yesterday. Your kindness and generosity meant the world to both of us.

And yes… even though I’m not running my bakery right now, of course I still had to make the cake & desserts 😌

Days like yesterday are a reminder that sometimes the most beautiful beginnings come from choosing a different path and building something better for the next generation. šŸ’™

HUGE shout out to Ashley, Liz, Brittany Couch, Patrick O'Brien, Sierra, Jenna for all your help. My truck has been broke down for a week now so Ashley & Liz transported me, Jessie, 2 of my kids & all the baby shower decorations, setup stuff & food to & from the baby shower & they also were a huge help with setting up, helping with games, photos, cleaning up. Pat & Brittany did an amazing job with completing the balloon arch, setting it all up & helping in other areas. Sierra helped with setup, running to get a few things we forgot & offering her help to transport things back to Jackson. Jenna for bringing all the extra stuff that wouldn't fit into the other vehicles. They were all so incredibly kind, helpful & showed so much love. Thank you so much! šŸ©µšŸ’™

I finally did it… my first sourdough sandwich loaf šŸž

This starter took almost two weeks to get right, but it was worth the wait. I used the same starter recipe I always do and followed a sandwich bread recipe from Thesourdoughhoe on Facebook. Honestly, it was way easier than I built it up in my head to be, and my family absolutely loved it. I'll definitely be trying more of her recipes & will share what I'm doing with you all as well. If you’ve been intimidated or just struggling to make your first loaf, I suggest you give her a follow.

Of course I’ll keep improving my techniques, but for a first loaf I’m really happy with how it turned out.

Also, I know it’s been a little quiet here lately. Life has definitely been keeping me busy, but I appreciate everyone who’s still here following along.

I’ll be making another post (and possibly a video) showing the starter process and the bread recipe I used for anyone who wants to try it themselves.
