šMediterranean bowls for dinner tonightš
Rice, chicken, cucumbers, tomatoes, chickpeas, avocado, mango, kalamata olives, feta cheese & homemade tzatziki sauce.
To some people this may just look like dinnerā¦but for our family, itās also a reminder of how far my son Quintin has come.
Years ago, a bowl with this many textures would have been overwhelming for him. Certain foods could cause gagging, frustration, tears, or him refusing to eat altogether. As his mom, I learned that it wasnāt about him ābeing difficult.ā His brain was processing textures, flavors, smells & experiences differently.
So we worked through it together.
Over & over & over again.
Some foods had to be introduced 20+ different ways. Some things were a hard no at first but became favorites later. Sometimes I had to change textures, preparation, or simply keep encouraging him to try one tiny bite. Other times, we just had to pause & try again another day.
Now weāre at the point where I can say:
āI think youāll like this. Will you try it for me?ā
ā¦and most of the time, he will š„¹
He still has some texture sensitivities, but the growth has been incredible. Watching him confidently eat meals like this is something most people probably wouldnāt think twice about, but for us itās a huge win.
Iām proud of him every single day. š
