CHEESY SCALLOPED POTATOES
INGREDIENTS
2 pounds potatoes (thinly sliced)
1/4 cup butter
1 1/2 teaspoons minced garlic
3 Tablespoons all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups milk
2 cups shredded cheddar cheese (divided)
INSTRUCTIONS
Preheat oven to 350°F. Butter a 8×8 or 7×10 pan. Then line half of the potatoes on the bottom of the pan.
Melt the butter in a small sauce pan over medium heat. Add in the garlic and cook for 1-2 minutes. Whisk in flour, salt and pepper. Let cook another minute.
Turn heat to medium low. Slowly whisk in the milk and whisk until smooth. Bring to a light simmer to allow to thicken. Then stir in 3/4 cup cheese until melted and remove from heat.
Pour half of the sauce over the potatoes. Then sprinkle about 1/2 cup cheese over top. Line the remaining potatoes over top. Then add the remaining sauce and cheese over top.
Bake uncovered for 50-60 minutes, or until potatoes are fork tender an the top is golden brown.

SLICED BAKED POTATOES
I made this tonight and it is AMAZING! Tastes just like the restaurant. This recipe is from Longhorn Steakhouse. My Mom found the recipe in the paper. I love this dish at Longhorn’s and I was really excited to try it at home!

Ingredients:

4 medium potatoes, Russet is what I used
¼ tsp salt
⅛ tsp pepper
⅛ tsp cayenne pepper
⅛ tsp garlic
⅛ tsp paprika
4 to 6 tbsp olive oil

Instructions:

-Wash and dry the potatoes.
-Slice the potato no more than halfway down side to side. (you can also do the slices at angles to get a crispier potato).
-Preheat the oven to 400*.
-Mix the seasoning all together.
-Spritz the potatoes with olive oil.
-Sprinkle the seasoning mixture evenly over the potatoes.
-Set the potatoes on a parchment lined baking tray.
-Bake 40 to 45 minutes.

Soft lemon cookies
Ingredients:
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, softened
1 1/2 cups granulated sugar
2 large eggs
2 tablespoons lemon juice
2 teaspoons grated lemon zest
1 teaspoon vanilla extract
Powdered sugar, for dusting
Instructions:
Preheat oven to 375 degrees F. Line baking sheets with parchment paper and set aside.
In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.
In a large bowl, beat the butter and sugar until light and fluffy, about 3 minutes. Add the eggs, one at a time, and beat until combined. Add the lemon juice, lemon zest and vanilla extract, and beat until combined.
Gradually add the dry ingredients to the wet ingredients, and beat until combined.
Drop by tablespoonfuls onto the prepared baking sheets. Bake for 10-12 minutes, or until the edges are lightly golden.
Let cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Dust with powdered sugar before serving. Enjoy!

Ok I am being visited by family members and it's begining to drive me crazy. I don't smoke actually no one does in my house. In my hall way this morning all I can smell is cigarette smoke. I told them no smoking in my house. LOL I am not sure who it is but I do know it's family. I am noticing a lot more activity lately and I am wondering what is going on in the spirituial world that is making them all uneasy. Could be that Halloween is coming but again not sure. What are your thoughts fellow club members.

Its a sad day when you share your opinion and you are snapped at by the mediator of a fan page for doing so. I follow the fan page for a popular paranormal television show that will remain without name here. We they announced they would be airing a Friday the 13th special in which the would be recreating pagan rituals in order to invoke spirits I commented that I would not be watching as I found it disrepectful that they would make light of a true religious belief in that manor. Its my view that all religions should be treated respectfully, including my own beliefs and rituals should be held sacred and not recreated for entertainment reasons. The page mediator about jumped down my throught for posting such a comment. Talk about taking things a little to personally. Anyway, I hope you folks out there can see my point of view and show respect for what other people believe in. After all, we all believe in something a little spooky, don't we?

So my family and my sister's family went up to the mountins last weekend. When we were up there my Brother-in-law told us of an 1800's cemetery out in the middle of nowhere. So we went there and it was awesome. So after my sister looked it up and found out about an old town nearby they Cemetery. So our Paranormal team is going up to take some readings, and see what we can find. What we find out about we will post the info for you all...

So my husband asked me this morning when we got up if I had sprayed perfume at 3 am this morning. I said no why do you ask? He said I got a wif a perfume this morning. He said it was strong and then lingured away. I love when this stuff happens to someone other than me. I said next time say hello and see what happens.

It really sucks that I have been out of commition for so long. Still recovering and not sure when I will get the OK to get back to my normal, or somewhat normal life. It looks like sometime around May. For those of you who were not aware of what was happening with me, lets just say that life caught up with me and I have had to take things easy for a bit.

Hopefully we will get back into the swing of things soon, as all of us, have been struggling with personal issues that have kept us from doing what we like best. Soon we will be posting daily on this page and giving you something to talk about, or at least argue about. Hang in there, I am.
