Our second shipment of single-origin hojicha just arrived from Japan — the result of two months of tasting, feedback, and refinement with our tea grower.

Think toasted chestnut, brown sugar, and a gentle touch of warm wood: smooth, mellow, carefully roasted. Matcha asks for your attention; hojicha simply wraps around you.

Our grower prepared two distinct roast profiles for us, and we’ll be exploring both.

Over the next four weeks, you’ll find them across our chiffon cakes, whole-cake cups, mooncakes, lattes, gelato, and Taiwanese snow cubes.

Yesterday was my birthday, and we spent the day in New Jersey’s Koreatown checking out cake shops. It was such a fun and rewarding trip — we learned a lot, came back with so much inspiration, and honestly, the Korean food was so good. Like, truly unbelievably good.

But the sweetest part was coming home to Ithaca and receiving this little gift: a song written for me by a little one. It made me feel so touched, so happy, and so proud.

And as a little extra story from tonight, I made a chocolate cake for the kids — and they loved it. That kind of joy always means so much to me. 🤎🎂

朋友們，我們很開心在除夕這一天上新這款合作的馬年春節手工甜點。

此次與我們合作的是Ithaca專門做可頌的烘焙店Flake。她的主廚Max是美國廚藝學校的高級指導，回到Ithaca之前，在芝加哥、波士頓、紐約等多家高級餐廳擔任主廚，褒受稱讚。

他們在Ithaca正式推出flake之前，就請我們嘗試了他們的可頌。熟悉taiwan cakery的朋友都知道，我們在內部有一個極其嚴苛的品控標準，通不過內部試吃環節的甜點是無法與大家見面的。但我們第一次試吃他們的可頌就驚艷了，給予了非常高的肯定。在flake出現之後，他們現在是Ithaca可頌店當之無愧的第一名。

Here is the story behind the design:

🍎 The Foundation
You’ll see apples woven throughout the artwork. This is intentional. The apple honors our farmers—the very foundation of this market. It is a nod to the growers who bring us the freshest earth-to-table bounty, reminding us why fruit and flowers define our identity.

🎂 The Diversity
At the heart sits a cake, celebrating the culinary mosaic of our food vendors. Representing flavors from Japan, Tibet, Thailand, Mexico, Puerto Rico, and beyond, this cake is a symbol of delicious diversity—a place where cultures meet on the palate.

🐎 The Spirit
The Horse, commanding the space, embodies our artisans. Just as the horse represents vitality, our artisans use their creativity to turn fleeting ideas into tangible beauty—objects we can hold, cherish, and pass down.

🧧 The Philosophy
Stamped like a classic seal, the Lunar calendar reminds us that culture is a living, shared rhythm. True cultural exchange isn’t about blindly preserving the past; it is about allowing what is genuinely beautiful and generous to meet, enrich, and coexist with new forms of beauty.

💖The Wish
Finally, the character 「福」 (Fu) rests by the horse. It is a timeless wish for prosperity, connection, and the good fortune that follows good hearts. It is our blessing to every farmer, maker, and visitor at IFM.
