It’s been hard to wrap my head around this past weekend!! Now that we survived it, I finally have a chance to start posting!

I’ll finish with the best for last!! By the skin of our teeth we made it into the finals.

Our dish - requirement was to use cayenne pepper. And the. We had a mystery basket item - the catch this year was we didn’t all get the same ingredient! There was a display of about 12 items and since we laced 7th to get I , we picked last. What was left? Mushrooms (ironic, right), carrots, potatoes and grapes. So….we picked grapes. Now to figure how to add it!!

Our dish - passion fruit mousse (we added some of the grape juice and a touch of cayenne) candied fruit (pineapple, grapes, a red jalapeño), rm snap cookie crumbles (with a touch of cayenne), coconut mousse, grilled pineapple (grilled with brown sugar and cayenne), a rum snap cookie, and we made “caviar” with more of the grape juice.

We finished in second place! Considering I 1000% changed our recipe 24 hours before we competed, I can’t be mad with that!

Must be opening day of World Food Championships. Two coffee day. Two different Tinker Coffee Co. - the Firehouse and thr The AMP at 16 Tech. Time to cheer on the first round of Team Indiana chefs!!

Registration is complete for the 2026 World Food Championships!! Team Indiana is going to kick some butt again this year. And since we don’t have a burger competitor, I’ll be cheering on chef Charline Rousseau and the France Burger Team! I’ve gotten to know them this past week - loaning them some equipment, helping them source ingredients and I just ADORE them!!! Today we did an interview with the French show similar to 60 Minutes in the US.
