We have garlic scapes!
Garlic scapes are the long, curly, deep green tender stem and flower bud of a hardneck garlic plant. Harvesting the scapes is an integral part of growing garlic. If the scapes aren’t removed, the plant expends energy trying to grow the stem and flower…thus reducing the size of the garlic bulb.
Garlic scapes are in season right now! They are seasonal. They are DELICIOUS! They taste like a blend of onion, scallion and garlic. They have a texture that is similar to asparagus.
Even in season, garlic scapes are hard to come by, so stock up now while they are available. They will keep for up to 2 weeks in the refrigerator or you can chop and freeze them for later use. (The scapes at The Wild Ramp were harvested today. 6/6/23)
Scapes can be used in numerous recipes. They can be used in recipes calling for garlic or scallions. They can be sauteed, pureed, roasted, and pickled. They are great in stir-fries, omelets, soups, salads, and pestos.
White Bean and Garlic Scapes Dip
1/3 cup sliced garlic scapes (4 to 5)
1 tablespoon freshly squeezed lemon juice, more to taste
1/2 teaspoon salt, more to taste
Ground black pepper to taste
1 can (15 ounces) cannellini beans, rinsed and drained
1/4 cup extra virgin olive oil, more for drizzling.
1. In a food processor, process garlic scapes with lemon juice, salt, and pepper until finely chopped. Add cannellini beans and process to a rough purée.
2. With the motor running, slowly drizzle olive oil through the feed tube and process until smooth. Pulse in 2 or 3 tablespoons water, or more, until the mixture is the consistency of a dip. Add more salt, pepper, and/or lemon juice, if desired.
3. Spread out dip on a plate, drizzle with olive oil, and sprinkle with more salt.
Note: J.Q. Dickinson Salt is delicious with this dip. Try the smoked or ramp salt!
