I wanted to see what was the best frosting flavor for a carrot cake. So, I spent the afternoon making different frostings. The filling is a mix of creme fraiche and Swiss Meringue Buttercream (SMBC).

Frostings tested: Mexican Vanilla SMBC, Brown Sugar SMBC, Ceylon Cinnamon SMBC. The Ceylon Cinnamon SMBC was the winner. So many flavors that all work well together. The sweetness of the SMBC with the tartness of creme fraiche is amazing.

50th wedding anniversary cake plus I got to use Meyer lemons from my own tree for this very special, very lemony cake! This was four layers of lemon cake. In between the layers, there was a lemon curd mixed with vanilla Swiss meringue buttercream. It was all covered with vanilla Swiss meringue butter cream.

This may actually be the best cake I’ve ever had! The cake is five layers of chocolate with a hint of Cuban espresso....

This may actually be the best cake I’ve ever had! The cake is five layers of chocolate with a hint of Cuban espresso. In between each layer is a raspberry creme. Look at the close up of the pink swirls. You can see pieces of real raspberries. On the outside, there is a decadent chocolate Swiss Meringue Buttercream and Swiss Meringue raspberry buttercream. The dark brown is an oh so chocolaty ganache. No food coloring was used. It’s all natural ingredients.

Cupcakes!! Super chocolaty cupcake, stuffed with cookies & cream and topped off with a swirl of cookies & cream and Swiss meringue buttercream. I added Mexican vanilla to the frosting. Have you ever had Mexican vanilla? It’s delicious and the only one I use. Then, instead of a cherry on top, how about a chocolate covered mini Oreo cookie? And, as with all my cakes and cupcakes, it’s not too sugary. $3.50 each with a minimum order of 18.

White Trash theme birthday party. When I heard they were having mud wrestling, I had no choice but to include a mud wrestling “ring” on the cake.

The cake is vanilla with raspberry creme filling and Mexican vanilla Swiss meringue buttercream.
