If you know me, you know I love learning and sharing knowledge. Making truly world-class croissants is an intricate process, and most people don’t have access to the right knowledge, techniques, or ingredients.
I’ve had many mentors help me perfect my craft, but one of the most remarkable is Alejandro Guerra ()—a world-class pastry chef who has trained some of the best croissant makers in the world. He understands the nitty-gritty of flour, protein content, fermentation, and all the science behind perfect lamination.
